What springs back at first and pulls the portafilter tight against the group head hardens over the years. The handle then moves further round, step by step, until at some point it almost turns all the way through.\u003c\/p\u003e\n\u003ch3\u003eWhat a fresh gasket restores\u003c\/h3\u003e\n\u003cp\u003eThe visible part is the water escaping at the edge of the portafilter. The invisible part is the pressure lost there. Because pressure shapes the aromatic window of time and different compounds dissolve at different points, even a small loss shifts the whole profile in the cup: less body, flatter sweetness, a shorter finish.\u003c\/p\u003e\n\u003cp\u003eWith a fresh gasket, the bayonet mount engages at the usual angle again, and the pressure stays where it belongs – in the puck.
