biszu 150 CHF Shopguthaben sichern →You turn the wooden paddle, and the pressure on the manometer slowly rises – drop by drop, precisely as you feel it. This is exactly what makes the Bianca special: you dictate the pace of the extraction, not the machine.
The Lelit Bianca V3 is a dual boiler with an E61 group head and a mechanical paddle for full flow control – available in chrome, black, and white. It's not just technology: with its wood, the paddle, and its presence, it makes a statement on the counter. And it invites you to take an active role in the extraction process.
Using the paddle on the group head, you regulate the water flow at every stage of the extraction. Turn it up, and the pressure rises to its maximum; pull it back, and you begin gently with a long pre-infusion. The group head manometer shows you the actual pressure in real-time.
Flow control is not a switch for the perfect shot, but a learning process to play with: you work with flow, pressure, and time to discover what tastes good to you. We extract by weight ratio – 1:2 as a starting point, so about 18g of coffee to 36g of espresso – and adjust from there. There's no right or wrong; the coffee just needs to taste good to you.
Two separate stainless steel boilers – one with 1.5 liters for steam and hot water, one with 0.8 liters for brewing water – ensure stable temperature and allow simultaneous brewing and frothing. The thermosiphon-controlled E61 group head (Lelit L58E) maintains constant heat and is the classic choice for balanced espresso.
From a cold state, the Bianca reaches temperature in about 20 to 25 minutes – the E61 group needs this time for everything to be evenly heated.
Via the Lelit Control Center (LCC) with an OLED display, you set brewing and steam temperatures, pre-infusion, and standby times, read temperatures and a shot counter, and can switch off the steam boiler separately if needed. Additionally, there are four electronic brewing programs: Full Flow with consistently full pressure, Low Flow with reduced pressure at the beginning and end, and both with pre-infusion. This way, you can make a profile you like repeatable – with or without the paddle.

For everyone who wants to get hands-on with espresso – who wants to play with flow, pressure, and time to find their perfect shot. But it can also be simply "press-a-button-and-go": PID temperature, saved profile, done. From the first cappuccino to a pour-over-like cup via the paddle, anything is possible. No prior knowledge is needed – the machine grows with you.

From the roastery: With the Bianca's flow control, you can get a lot out of many beans. For full-bodied, chocolatey espresso and milk drinks, we recommend Cozy Chocolate, Nutty Delight, and Very Nutty; if you like it bright and fruity, try Wild Peach or Bright Cassis from our coffee beans. Start at 1:2 and experiment with the paddle. This is our recommendation, one of many.
