Explore more →Every bean that runs through the Pico touches these two burrs first. Conically ground, 39 mm in diameter, matched to each other down to a tenth of a millimetre – they are the point where the whole bean becomes the grounds that later land in the portafilter.
After many kilograms of ground coffee, the sharpness of the edges changes. The grounds turn into fine dust instead of uniform particles, extraction becomes less consistent, and the grind size needs constant readjustment to keep the same result. A new burr set brings the cutting edges back to factory level.
Conical burrs cut the bean instead of tearing it apart – with sharp edges, this creates an even, clump-free grind that water can flow through without channelling. When the edges become dull, more fine dust and more spread in particle size appear at the same time – two effects that show up in the espresso as a less consistent, less predictable extraction, even if the grind size and dose stay the same.

For anyone with a Pico whose grounds increasingly look dusty, or whose espresso extracts less consistently than before despite unchanged settings. Replacing the burrs is an intervention in the grinder – if you're unsure, we're happy to take care of it in our service.
