Why weight says more than time

Extraction can't really be captured in seconds. An espresso that was perfect at 27 seconds last week can taste different today with the exact same settings – the bean has kept developing since roasting, the humidity in the room is different, and even your hand tamps minimally differently today than yesterday. No shot is replicable, because bean, humidity, and person change every day. That's not a limitation – that's what makes it beautiful.

What remains is the weight ratio. 1:2 as the standard – 18 grams of ground coffee become 36 grams of espresso in the cup, regardless of how long the shot takes to pull. Time is only a side effect; the result in grams is the real control variable. Over 800 aromatic compounds are packed into every bean, and which of them dissolve is determined largely by this exact ratio of water to coffee – not by a stopwatch.

There are no espresso laws and no espresso police here. The only thing that matters: the coffee has to taste good. The scale is the tool for that, not an end in itself – it makes visible what you could otherwise only guess at, and lets you hit yesterday's shot again today, even though everything around it has shifted just a little. Espresso is complex, but it's not rocket science.
