Why single-dosing at all
In a classic hopper grinder, beans often sit in the bean hopper for days, sometimes weeks. The volatile aromas oxidize due to oxygen contact, and the coffee oils change. Single-dosing means: only the exact amount being used goes into the grinder. No residual amounts sitting around, no mixing with yesterday's coffee. All three Varia grinders are consistently built for this workflow, with retention below 0.1 grams (with RDT spray, for over 10-gram doses) – meaning what is ground today ends up completely in the cup.
Burr geometry determines character
Conical burrs – as in the VS3 and VS4 – deliver a bimodal particle distribution with a bit more fines and larger pieces. The aroma profile becomes denser, the body fuller, the texture creamier. Classic profiles with chocolate, nut, and caramel come through expressively. Flat burrs – as in the VS6 ex-factory – create a more uniform particle distribution. The aroma profile becomes clearer, the separation between notes more distinct, and light roasts with fruity nuances unfold more precisely. It's not a matter of better or worse – it's a different character. Our observation from the roastery: Both geometries have their justification, depending on the bean and the brewing ritual.

Varia VS3 Gen 2 – compact, quiet, classic
The VS3 is the smallest and quietest grinder in the Varia range. At 3.2 kg, it sits firmly on the counter, and at 170 RPM, it grinds deliberately and generates little heat – aromas are better preserved due to the gentle speed. The 38 mm conical Supernova burrs produce a bimodal grind with a pronounced body. The stepless adjustment by rotating the hopper (10 microns per increment) is a classic Varia principle: easy to use, no frills.
What this means in the cup: shots with dense texture, emphasized sweetness, and a classic chocolatey-nutty profile. Anyone who loves dark to medium roasts and is looking for a compact grinder for one to three shots per day will find a reliable grinder that will last for years. For lighter roasts or high daily throughput, the VS4 will be more relaxed.
Varia VS4 – variable RPM in a compact housing
The VS4 is the evolution of the VS3 idea and technically in a different league. The 200-watt brushless DC motor with planetary gear delivers 14.5 N·m of torque at the burr – allowing it to work through light, hard roasts without struggling. The RPM can be continuously adjusted between 150 and 300; low speed reduces fines and brings more clarity to the aroma profile, while higher speed creates more body. With 53 mm conical burrs (Supernova, 6-core) and active ionization for static reduction, the workflow is clean and fast – 18 grams in about nine seconds.
What this means in the cup: More definition than the VS3, more clarity of notes, more flexibility between bean types and roast levels. The VS4 is compact enough for the home kitchen (161 × 98 × 337 mm, 5.3 kg) and at the same time powerful enough for households that pull three to ten shots daily or regularly switch between espresso and filter.
Varia VS6 – Flat Burrs, variable speed, interchangeable geometry
The VS6 is the flagship of the series and plays in a different size class – around 10.7 kg, all-metal construction, with TSU-1 transport case. Ex-factory with 58 mm flat burrs (Supernova), optionally convertible to 63 mm conical burrs, which brings a fundamental change in character. The RPM can be continuously adjusted between 500 and 1600, with an LED display and haptic feedback during adjustments. The grind setting in 5-micron steps with a revolution counter makes settings reproducible across different beans. Active Ionization needles and a spring-loaded knocker keep the workflow clean.
What this means in the cup: With 58 mm flat burrs, precise separation of aroma notes – particularly impressive with light roasts with complex acidity. With the 63 mm Conical Burr upgrade, significantly denser body and texture for classic espressos. The ability to switch both geometries and adjust the RPM makes the VS6 a tool for exploring bean character – not a "press button, done" grinder, but a grinder that you get to know and that grows with you.
Which Varia suits which daily routine?
The VS3 is for households with one to three shots per day who want a compact, quiet grinder and mainly use medium to dark roasts. No budget is too tight for good coffee – the VS3 proves that daily. The VS4 is for everyone who wants variable RPM, regularly switches between roast levels, and appreciates a fast, clean workflow – three to ten shots per day, family, home office. The VS6 is for everyone who wants to actively experiment with grind size and speed, who seeks flat-burr clarity, and for whom the possibility of swapping burr geometries means something.
None of these criteria make one grinder better than another. They are different daily routines and different rituals. If you want the VS6 on your counter because its weight, precision, and interchangeability simply evoke something – that's a legitimate decision. Those who want it know why.

Can I see the three Varia grinders before buying?
Yes. All three models are connected in our showrooms in Bern and Zurich. You can bring your own beans or work with ours and compare the difference directly in the cup. Not all three are always in stock in both showrooms at the same time; transport takes 1 to 3 days.
What is the essential difference between VS3 and VS4?
Two key points: first, the burr size (38 mm for the VS3 vs. 53 mm for the VS4) – larger burrs grind more homogeneously and faster. Second, the RPM control – the VS3 operates at a fixed 170 RPM, while the VS4 is variably adjustable between 150 and 300 RPM. This allows you to grind at lower speeds for lighter roasts for more clarity and at higher speeds for darker roasts for more body.
What does the flat-burr geometry of the VS6 offer compared to conical burrs?
Flat burrs produce a more uniform particle distribution. The result in the cup: clearer separation between aroma notes, more perceptible acidity in light roasts, more precise texture. Conical burrs, on the other hand, produce more fines and thus more body, more creaminess, and a denser mouthfeel. Is the VS6 worth it over the VS4?
The VS4 excellently covers everyday needs for the vast majority. The VS6 is worthwhile for anyone who wants to actively work with burr geometry and variable speed. If you "just want coffee" and don't want to spend every day experimenting with grind sizes, the VS4 is perfectly adequate. If you want to delve into grind size, RPM, and burr changes, the VS6 is the tool for you.
How long do the burrs last?
The standard Supernova Burrs are rated for a lifespan of approximately 150 kg of coffee. In home use with 3 to 10 shots daily, this corresponds to many years. Varia also offers upgrade burr sets (Hypernova Titanium-coated, Kilonova DLC-coated, SSP) that last significantly longer and deliver different aroma profiles. How is Varia delivered in Switzerland?
All three models can be ordered directly online in the webshop. Delivery throughout Switzerland and to Liechtenstein within 2 to 4 working days. Click & Collect in both showrooms is possible at any time. Financing is available.
Do I get an introduction when I buy a grinder?
When purchasing an espresso machine above a certain price range, the private barista course with extraction philosophy is included – about 60 minutes in Bern, Zurich, or online. For all those who combine their Varia with an existing machine, we are happy to advise on grind setting via email or in the showroom.
