You fill the brew cylinder with boiling water. Wait 45 seconds. Water out, puck screen on, the filled portafilter clicks into the brew base with the bayonet lock. You lower the lever – slowly, with the weight of your hand, not with force. Pressure builds up on the manometer: three bar, five, seven. The first drops fall, dark and slow. This is the Flair 49 Pro in everyday use. A fully manual lever espresso machine with a 49mm portafilter, integrated pressure gauge, and a brew path entirely made of stainless steel – no plastic comes into contact with the brewing water. It sits between the Flair Neo Flex and the stationary Flair 58+2 (58mm) and fills a gap that many home setups had: a lever setup with a café-level brew path, without the footprint of a 58mm machine.

Why 49mm – the real difference
The 49mm portafilter is not a cosmetic detail. With the same dose, the coffee puck sits deeper in a 49mm basket than in a 58mm basket – the cross-sectional area is smaller, so the puck is taller. What does this mean for the cup?
Longer contact time, more resistance
The water travels a longer distance through the coffee grounds. More resistance, more pressure build-up, longer dwell time – this tends to bring more body and mouthfeel to the cup. Particularly the high-molecular compounds from Maillard reactions (melanoidins, bound lipids, longer-chain sugars) benefit from this.
More forgiving for grind size dial-in
The deeper puck tolerates smaller grind size fluctuations better than a shallow 58mm puck. Those who work with a grinder whose adjustment is not quite as fine will find the dial-in more relaxed with the 49 Pro. Even with coarser settings, the extraction remains more stable.
Lower doses meaningfully possible
With the pressurized basket, a dose of 10–15g is possible, and with the professional (non-pressurized) basket, 14–20g. This allows for extractions with smaller quantities, which would look like a thin pancake in a 58mm basket. For solo shots or light single origins, this is a real advantage.
Clear classification: The 49mm basket is not universally better than 58mm. It is different. 58mm setups have advantages with higher doses and finer profiles. 49mm is more forgiving, more compact, and tends to produce a denser mouthfeel. Which one suits you better depends on your setup and your taste – both ways are legitimate.
The Stainless Steel Brew Path – Café Level Without Electricity
One detail that distinguishes the 49 Pro from earlier Flair models: the entire brew path is made of stainless steel. Brew cylinder, plunger, hook – all without plastic in the water path. In conjunction with a hollow stainless steel plunger, designed for better heat retention, this means: faster preheating and more stable temperature throughout the shot. The thermal inertia, which sometimes led to temperature drops during the shot, is significantly reduced.
Preheating is still required – lower the lever, fill the cylinder with boiling water, wait 45 seconds, drain the water. For light roasts or cold days, a second preheating round is recommended from our showroom experience. More effort than an electric machine, but part of the conscious ritual.
No-Disassembly Workflow
For those with Flair experience: with earlier models, the brew head sometimes had to be partially disassembled between shots. With the 49 Pro, not anymore. The fixed cylinder with integrated valve plunger allows for successive shots without disassembly – lever out, refill water, next shot. This makes the 49 Pro suitable for everyday use for sessions with two or three shots in a row, without interrupting the ritual.

How does the 49 Pro differ from the Flair 58+2?

Both are fully manual – the choice depends on the use case, space, and desired depth of ritual.
How long does preheating take?
According to the Flair Brewing Guide, around 45 seconds with boiling water in the brew cylinder. For light roasts or cold days, based on our showroom experience, we recommend a second preheating round, meaning another 45 seconds with fresh boiling water. Plus the time it takes to boil water.
Do I need electricity for the 49 Pro?
No. The 49 Pro is fully manual – no electronics, no electricity, no pump. You only need boiling water, freshly ground coffee, and a tamper. This makes it a good choice for travel, offices without power outlets, or conscious off-grid setups.
What is the optimal pressure?
The espresso zone on the manometer is color-coded between 6 and 9 bar. Classic 9-bar shots are reproducible, but the 49 Pro also allows for gentler pressures (6–7 bar) for profiles with milder flavors. Above 12 bar, the manometer shows a stop zone – usually a sign of too fine a grind or too high a dose.
What is the difference between pressurized and professional baskets?
The pressurized basket has a pressure valve and works with any grind size – even pre-ground coffee or simpler grinders. The professional (non-pressurized) basket requires an espresso-capable grinder with precise adjustment but provides direct insight into your extraction. Recommendation: Start with the pressurized basket and switch once you have developed a feel for lever pressure.

The 49 Pro thrives on the conscious ritual – and preheating. Our suggestion from showroom practice: Take two weeks with the pressurized basket and Cozy Chocolate before switching to the professional basket. Get to know the lever, how it feels when pressure builds up, when the sweet spot between 7 and 8 bar is reached. After that, with the non-pressurized basket, you'll notice how much the bean, grind size, and preheating shape the shot.
