Heat Exchanger System — what that means in practice
The Nini is a heat exchanger (HX) machine. Inside, there's a 1.5-liter boiler with hot water for steam and a stainless steel tube running through it for the brew water. When you start an extraction, fresh water from the tank flows through this tube, is brought to brewing temperature by the surrounding boiler water, and hits the puck. The boiler water itself never comes into contact with the espresso.
The advantage over a pure single boiler: you can extract espresso and steam milk without switching between processes or waiting for the machine to re-temper. The compromise: HX machines require a "cooling flush" before the first shot of the day, because the water in the heat exchanger tube gets too hot after a long idle period. With active PID control, this is significantly mitigated but still part of the ritual.
The heat-up time is around 20 minutes—typical for heat exchanger machines. After 20 minutes, not only the boiler water but also the group head (E61) is at operating temperature. Those who use the machine daily can set it to automatically power up in the morning via a timer switch.

PID Temperature Control
Instead of a simple pressostat control (on/off with pressure dependency), the Nini S PID electronically regulates the boiler temperature via a PID algorithm. This means: more stable temperature over time, less drift during successive extractions, precise adjustment to your bean. The display shows actual and target temperature, adjustable in 1 °C increments.
Volumetric Dosing (DE — Dosatura Elettronica)
Four programmable buttons plus a manual continuous button. You program the desired extraction quantity per button (in pulses or extraction time), and the machine stops automatically when the set quantity is reached. This is not weight-accurate like an external scale, but reproducible enough for everyday use—especially if you use a daily-driver blend with a consistent grind setting.
Integrated Shot Timer
When an extraction button is pressed, a digital timer starts on the display, showing the extraction time in seconds. Practical for dial-in without an external stopwatch, especially if you rely on classical 25–35 second extraction times as a first reference point.
External OPV
The Over-Pressure-Valve regulates the maximum brew pressure. On the Nini, the OPV is externally accessible—you can adjust the brew pressure (typically 9 bar) without disassembling the machine. For someone who wants to experiment with gentler brew pressures (8 or 7 bar), this is a real advantage over machines with an internal OPV screw.

- Wild Peach — light omniroast with peach notes. On the Nini, make the cooling flush a bit longer before the first shot and reduce PID to 92 °C, then the aromas open cleanly. A bean for the adventurous cup, not for every day.

Can I connect the Bezzera Nini to a fixed water supply?
The Nini is designed as a tank machine. A direct fixed water solution is not provided ex works. Bezzera's HoReCa models offer direct water connections—we will gladly advise you on these if needed.
Which grinder is suitable for the Bezzera Nini?
Any espresso-capable grinder with fine grind adjustment. Recommendations from our range: Varia VS4, Eureka Mignon series, Mahlkönig E64 WS. For pour-over workflows, a Comandante C40 MK4 complements well.
Can I do pressure profiling on the Nini?
With the optional Flow Control Kit (BZ-Group, available on request for PID versions), the brew flow can be manually controlled during extraction—this is a form of analog pressure profiling control. Third-party pressure sensors are compatible.
How maintenance-intensive is the Nini?
Daily backflushing without cleaning agents, backflushing with cleaning agents every approximately 50 extractions (5 min). E61 group heads are very robust and easy to maintain—gaskets and shower screens can be replaced easily. We have spare parts in stock.

The Nini is an honest Italian HX machine—it rewards classic espresso workflows with dense beans. My suggestion from showroom practice: start with Cozy Chocolate or Nutty Delight and program your standard extractions on two of the four volumetric buttons. One button for 36 grams output for solo espresso, one for 60 grams for doppio in milk drinks. Once the volumetric dosing is set with your 1:2 brew ratio, you have a reproducible daily-driver workflow. Do not skip the cooling flush—the first 1.5 to 2 seconds of water through the empty group head are part of the ritual and protect the puck from overly hot water. For light roasts like Wild Peach, it's worth reducing the PID to 92 °C and doing a bit more cooling flush, then the aromas open cleanly. This is my view from the roastery, one of many.
