Why this server is more than a jug
The glass comes from a tradition that began with laboratory glass. Borosilicate withstands rapid temperature changes without reacting, and gives off no flavour of its own into the coffee. What arrives in the server stays just as it came out of the filter.
Temperature has a say in which compounds release from the coffee and stay in the drink. A vessel that holds the warmth gives you a bit more time before the aroma profile shifts. And because taste and smell are inseparable, it's no coincidence that the first warm cup seems fuller: a large part of what we call aroma rises retronasally to the olfactory mucosa as we swallow.
