Lelit Bianca V3 – dual boiler with E61 brew group and flow control

You turn the wooden paddle, and the pressure on the gauge slowly rises – drop by drop, entirely by feel. That's exactly what defines the Bianca: you set the pace of the extraction, not the machine.

The Lelit Bianca V3 is a dual boiler with an E61 brew group and a mechanical paddle for full flow control – in chrome, black, and white. It's not just technology: with its wood, the paddle, and its presence, it's a statement on the counter. And it invites you to take extraction into your own hands.

The paddle – flow and pressure by hand

The paddle on the brew group lets you regulate the water flow in every phase of the extraction. Turn it up, and the pressure rises to the maximum; pull it back, and you start gently with a long pre-infusion. The brew group gauge shows you the actual pressure in real time.

Flow control here isn't a switch for the perfect shot, but a learning process to play with: you work with flow, pressure, and time and find out what tastes good to you. We extract by weight ratio – 1:2 as a starting point, so around 18 g of coffee to 36 g of espresso – and adjust from there. There's no right and no wrong; the coffee just has to taste good to you.

Dual boiler and E61 brew group

Two separate stainless steel boilers – one with 1.5 litres for steam and hot water, one with 0.8 litres for brew water – ensure a stable temperature and let you pull a shot and steam milk at the same time. The thermosiphon-driven E61 brew group (Lelit L58E) keeps the heat constant and is the classic choice for a balanced espresso.

Starting from cold, the Bianca is up to temperature after around 20 to 25 minutes – the E61 group needs this time so that everything warms through evenly.

LCC and Low Flow – make what you like repeatable

Through the Lelit Control Center (LCC) with its OLED display, you set brew and steam temperature, pre-infusion, and standby times, read out temperatures and a shot counter, and switch off the steam boiler separately when needed. Add to that four electronic brew programs: Full Flow with consistently full pressure, Low Flow with reduced pressure at the start and end, and both again with pre-infusion. That way you can make a profile you like repeatable – with or without the paddle.

Who the Bianca V3 is made for

For everyone who wants to get hands-on with their espresso – who wants to play with flow, pressure, and time and find their own shot. Just as easily, though, it can simply be push-button-and-go: PID temperature, saved profile, done. Everything is possible, from your first cappuccino to a pour-over-like cup via the paddle. No prior experience is needed – the machine grows with you.

What goes with it
