Lever Espresso Machines
Buy Lever Espresso Machines Switzerland – from Travel Brewer to Swiss Manufacture
The first espresso machines were lever machines. In 1947, Achille Gaggia patented a system in Milan where a lever tensions a spring, which in turn presses hot water through the coffee grounds – without an electric pump. This design made espresso, as we know it today, possible in the first place (with crema, higher pressure than steam machines, clear aroma extraction).
Today, the lever machine is a conscious choice. You trade convenience for involvement. Instead of pressing a button and waiting, you tension the lever, observe the pre-infusion, let the spring do its work, and watch the mechanical pressure build. Some lever machines give you more control over the pressure profile than any electronically controlled machine. Coffee Coaching Club carries 15 active lever models from three design classes – from compact travel brewers to Swiss spring-piston manufactures.
Three Lever Designs
| Design | Function | Examples at CCC |
|---|---|---|
| Spring-Lever | You tension a coil spring with the lever. When released, the spring relaxes in a controlled manner and pushes the water through the puck. Pressure profile mechanically predetermined: high at the beginning, falling towards the end. | La Marzocco Leva X, Manument Leva, Profitec Pro 800, Rocket Bicocca |
| Direct-Lever | You press a piston directly with your hand. You determine pressure and speed yourself – maximum control. | Olympia Cremina, Olympia Cremina SL, Olympia Mina |
| Manual Lever Brewers | Compact mechanical devices without a boiler; you heat the water externally. Travel-friendly, backup solution. | Flair (2 GO, Classic, Pro 3, 49 Pro, 58+2), Aram, Superkop |

When a Lever Machine is Right for You
If you're interested in the mechanical process. If you want a machine where you actively work with the tool to achieve the result. If you enjoy experimenting with pressure profiles – Spring-Lever provides a natural, declining pressure profile that is otherwise difficult to reproduce. Or if the aesthetics and heritage of a 70+ year old design appeal to you.
What a lever machine is not: fast and uncomplicated. You need good grinding (more critical than with pump machines), practice, and the willingness to see each cup as an individual process. Many lever owners also have a pump machine for a quick morning espresso. How you use it – that's up to you.

Service in Switzerland
For machines over CHF 3,000, we include a free barista workshop at our roastery – including a specific lever workflow. Swiss service for Olympia Express is handled directly by the manufacturer (Aargau). Manument waiting lists are coordinated with Thun upon order. Heylight installment payment possible. Free shipping in Switzerland and Liechtenstein from CHF 60.
In the showrooms in Bern (Gerberngasse 44) and Zurich Oerlikon (Hagenholzstrasse 50b), you can pull lever machines directly – La Marzocco Leva X, Manument, Profitec Pro 800, Rocket Bicocca, Olympia Cremina, and Flair. Please arrange an appointment in advance so the machine is heated up.

Frequently Asked Questions
How much force do I need for a lever machine?
For Spring-Lever machines (Manument, La Marzocco Leva X, Profitec Pro 800, Rocket Bicocca), you pull the lever down once to tension the spring – the spring does the rest. For Direct-Lever (Olympia Cremina), you press against the water resistance yourself, about 15–20 kg of force depending on the grind. This is manageable but noticeable.
What is the natural pressure profile of a Spring-Lever?
A coil spring does not release its energy linearly. At the beginning, the pressure is highest (8–10 bar), and towards the end, it decreases (4–6 bar). This declining pressure profile corresponds almost exactly to what is described in Specialty Coffee as "declining pressure" – and is manually reproduced with flow-control paddles on dual-boiler machines.
Which grinder do I need for a lever machine?
A good one. Grind size is particularly important for lever machines because you don't have electronic correction via the pump. Recommended for Olympia Cremina and Spring-Lever entry: Eureka Mignon Specialita, Mahlkönig X54, Lelit William. For Premium-Lever (Manument, La Marzocco Leva X): Weber Workshops EG-1, Option-O Lagom P80, Varia VS6. For Flair and small setups: Hand grinders like Kinu M47, 1Zpresso J-Ultra, Comandante. We help with selection in the showroom.
What distinguishes the Manument from a La Marzocco Leva X?
Architecturally completely different. Manument has a patented multi-flow heater system (no classic boiler), a manual five-stage water flow valve, and is designed for maximum mechanical control – without a display, without electronics. La Marzocco Leva X has classic dual-boiler technology with touch control and is a bridge between lever tradition and modern operation.
What distinguishes Profitec Pro 800 from Rocket Bicocca?
Both are Spring-Lever machines in the price range over CHF 3,000. Profitec Pro 800 (CHF 3,289): German lever dual-boiler hybrid design with two insulated boilers and PID. Rocket Bicocca (CHF 4,199–4,299): Italian Spring-Lever design with classic Rocket design language. Both top-notch, an aesthetic decision between German and Italian schools.
Are Flair-Brewers "real" espresso machines?
Technically: yes – they generate 9+ bar of pressure, extract 25–35 g of espresso from 18 g of grounds in 25–30 seconds. However, you need external hot water (or the heated brewing element on Flair 58+2) and a good grinder. A fully fledged solution for travel, small kitchens, motorhomes, and as a backup to the main machine.
Which is the cheapest Spring-Lever with its own boiler?
Profitec Pro 800 (CHF 3,289) is the cheapest Spring-Lever with its own boiler in our active assortment. Below that are the lever brewers without a boiler (Flair, Aram, Superkop). Olympia Cremina is Direct-Lever (from CHF 3,679), not Spring-Lever.
Can I test lever machines before buying?
Yes, in the showrooms in Bern and Zurich Oerlikon. We have La Marzocco Leva X, Manument Leva, Profitec Pro 800, Rocket Bicocca, Olympia Cremina, and Flair on site. Lever-Pull with your desired bean and our instructions – please arrange an appointment in advance.
What is the maintenance for a lever machine?
Fewer moving parts than pump machines, but the spring, seals, and pistons need periodic maintenance. For Swiss brands (Olympia, Manument), maintenance is organized in Switzerland. For Italian and German brands (Rocket Bicocca, Profitec Pro 800, La Marzocco Leva X), we coordinate maintenance through the manufacturers. For Flair and manual brewers, maintenance can be done by yourself with standard seals.
