Grind-by-Weight (GbW) is the precision design of the modern espresso world: you specify a gram amount (e.g., 18.0 g), and the grinder grinds exactly that amount into the portafilter – regardless of bean density, roast level, grind size, or burr wear. An integrated precision scale continuously measures during grinding and automatically stops when the target weight is reached. The result: reproducible shots with minimal variation, ideal for specialty setups where espresso quality should remain at a consistent dosing level.

The two dominant design classes for electric espresso grinders differ fundamentally:
Grind-by-Time (GbT): the grinder grinds for a precisely defined time (e.g., 6.5 seconds). You set the time so that typically 18g are dispensed. Problem: bean density varies (freshly roasted vs. older beans, light vs. dark), grind size changes affect grind output speed, burr wear over time. This leads to dosing variations typically of ±0.3–0.8g per shot.
Grind-by-Weight (GbW): the grinder has an integrated precision scale and grinds exactly the desired weight. You specify 18.0g, you get 18.0g. Reproducibility typically ±0.05–0.1g. For specialty workflow, where shot quality depends on correct dosing level, this is a clear advantage.
Grind by Synch (GBS): Mahlkönig has extended the GbW logic – in addition to weight, the portafilter ejection time is synchronized. For café workflow with reproducible workflow speed.

For specialty workflow with high reproducibility: yes. The extra cost of typically CHF 200–500 compared to the Grind-by-Time version of the same brand is worthwhile if you use different beans, often adjust the grind size, or value reproducible shot quality. For home use with only one type of bean and stable grind size: GbT is sufficient.
Mignon Libra (CHF 748.95–798.95): compact design, 50mm burr, perfect for home with limited space. Atom W 65 Casa (CHF 999.95): 65mm burr for more grinding speed and tonal aroma depth, taller design. For classic home use with 1–2 shots daily: Mignon Libra. For higher volume or specialty demands: Atom W 65.
E64 WS (CHF 999.95): classic Grind-by-Weight design. E65W GBS (CHF 2,598.95): extended with Grind-by-Synch logic (simultaneously weight AND ejection time). For café workflow with reproducible workflow speed, the surcharge is worthwhile. For home with standard demands: E64 WS is sufficient.
Both are Italian professional class with 64mm burrs. Mazzer Mini G (CHF 1,149.95): classic Mazzer design, established professional brand. Fiorenzato F64 EVO Sense PRO (CHF 1,949.95): extended with EVO burr design and Sense Plus sensor technology. For standard specialty: Mazzer. For premium professional demands: Fiorenzato F64 EVO.
For Mahlkönig: WS = Weight Scale, i.e., the Grind-by-Weight version. For Eureka: W = Weight, i.e., the GbW version. The classic models without letters are the Grind-by-Time versions.
Typical precision for modern GbW grinders: ±0.05–0.1g. This is an order of magnitude more precise than Grind-by-Time (typically ±0.3–0.8g) and good enough for specialty demands. Premium designs (Mahlkönig E80W, Etzinger etzMAX) achieve ±0.05g, which is almost perfect in the specialty sector.
GBS = Grind by Synch. Mahlkönig's extended GbW logic that simultaneously synchronizes weight AND portafilter ejection time. Background: with classic GbW, the ejection time can vary (depending on grind size or bean), which creates inconsistencies in café workflow. GBS makes both variables reproducible. Very useful for café or home with high demands.
Both have their justification. External scale (Acaia Pearl S CHF 219.95): you weigh the exact dose after grinding, and can also track other workflow variables (shot weight, shot time). Integrated GbW grinder: the grinder automatically stops at the target weight, simpler workflow. For highest precision: a combination of both (roughly dose with GbW, fine-tune with Acaia Pearl S).
