Acaia Horizon – Post-Extraction Pressure Modulator
The espresso is in the cup, the crema still shimmering, a faint wisp of steam rising – and with it, every second, a piece of the aroma profile vanishes into the air. Fifteen seconds between ejection and the first sip. In this time frame, it's decided what reaches the cup and what dissipates into the air. The Acaia Horizon intervenes precisely here – not during grinding, not during brewing, but in the minutes after.
Co-developed with Mathieu Theis, the Swiss Barista Champion, who used the technology as part of his competition routine. The Horizon is a new tool, not a replacement for a good setup – but an answer to a question that has long been open in the specialty world: what actually happens after extraction, and can it be controlled?
What the Horizon actually does
The Horizon sits on the rim of the cup and creates a controlled low pressure in the headspace between the device and the coffee surface. An integrated pump and a pressure sensor actively regulate the balance between gas and liquid in the cup. Oxygen and carbon dioxide are reduced, while the fine aromatic compounds – the volatile substances that evaporate first at atmospheric pressure – are retained in the cup.
Acaia describes the result as a more balanced mouthfeel, rounded acidity, and clearer sweetness. Ben Bicknell from Acaia put it honestly: the device doesn't add anything new, but rather turns up the volume of what's already in the coffee. Time under reduced pressure shifts the balance, that's physics. How this manifests in the cup depends on the bean, roast, and brewing method. Science behind the cup
Freshly brewed coffee is an unstable system. Over 800 compounds are in solution – more than in wine. A portion of these, especially the small-molecule, volatile aroma compounds, are lost through evaporation before we take the first sip. What we perceive as "aroma" largely arises from retronasal olfaction: compounds ascend through the throat to the olfactory mucosa during swallowing. If more of these compounds remain in the cup, more of them reach their destination.
The Horizon works with a short low-pressure phase – Acaia reports experiments with 60 to 90 seconds, depending on the cup and preferences. Effects are also seen with espresso, with its CO2-rich crema. Acaia experimented with it at the World of Coffee in San Diego and also tested tea and wine with the method.

Who the Horizon is for

Nobody needs a Horizon. Those who want one usually know why. It's not a substitute for a good grinder, good water, or a properly calibrated machine – it comes afterward, in the minutes between extraction and sip. Frequently Asked Questions
Does the Horizon change the coffee or just influence perception?
Both are related. Physically, the low pressure shifts the balance between dissolved gases and liquid – volatile compounds remain in the cup longer. Sensorially, this affects mouthfeel, acidity, and sweetness. Acaia clearly states: the device adds nothing that is not already in the coffee. It makes audible what would otherwise escape.
Does the Horizon work with espresso, filter, or both?
Both. With espresso and its CO2-rich crema, the effects are often particularly clear. With filter coffee, the aroma profile also changes, often more subtly, but noticeably. Acaia has also experimented with tea and wine. Which brewing method benefits most is a matter of taste – comparing side by side is the fastest way to an answer.
What cups does the Horizon work with?
The Horizon has a diameter of 87 mm and sits on the rim of the cup with its silicone ring. It works with a range of common espresso and coffee cups. Very narrow or very wide cups may be outside the range – trying it out briefly in the showroom is the easiest test.
What is the connection to Mathieu Theis?
The Horizon was developed by Acaia in Taiwan in collaboration with Mathieu Theis, multiple Swiss Barista Champion. Theis used the technology in his competition routine to maintain the aromatic complexity of his coffee throughout the performance. The Swiss connection is part of this product's DNA.

How do I clean the Horizon?
With a soft cloth and warm water. No cleaning agents, no chemicals – the anodized surface is sensitive. The silicone ring can be removed, a spare ring is included in the delivery.

Roastery Tip
The Horizon shows its characteristics most clearly in a direct A/B comparison. Two identical espressos, one with a low-pressure phase, one without – the difference becomes audible in the sweetness and in the middle of the cup.
