Comandante C40 MK4 Lab Series Hammerhead – Hand Grinder with Hexagonal Block Blade

The first turn of the crank, the beans click between the burrs, and after just three or four rotations the aroma fills the room. With a bean like Pacamara – large, dense, a little unwieldy – you feel something different in your wrist. Less resistance, a smoother run, a sound that rings cleaner. That's the Hammerhead burr set at work.

The Comandante C40 MK4 Lab Series Hammerhead from our Comandante Collection is the newest variant of a hand grinder that has stood as a reference in specialty coffee for years. What's changed sits invisibly inside: the burr set. In the Bavarian Burr Lab in Germany, Comandante developed a new geometry – the hexagonal block blade, inspired by the head of a hammerhead shark. The shape isn't decoration. It changes how the bean is cut.

What makes the Hammerhead geometry special

Burrs are often treated as standard fare. They sit hidden inside the device, rarely getting any attention. Yet the geometry of the burr set plays a real role in determining which compounds are released from the bean. Coffee contains over 800 aroma compounds – more than wine. The Hammerhead block blade is shaped to shear larger, denser beans cleanly instead of crushing them. What comes through in the result: a denser body, a focused sweetness, clearly defined fruit aromas.

Comandante describes the Lab Series as an invitation to experiment – a space where the burr geometry itself becomes a variable. Our opinion is one of many, but we like this approach. A different burr geometry isn't better or worse than the classic Nitro Blade, just a different language telling the same bean's story differently. Anyone already drawn to Pacamara, Gesha or other large bean varieties will find a new playing field here.

The steel burr set is made from Nitro Rex® – a martensitic stainless steel from the Alpine region with over 17 percent chromium content and precisely balanced proportions of vanadium and molybdenum. The result is a hardness and corrosion resistance that keeps the burr set working consistently for years. The body of the grinder is stainless steel, the axle stainless steel, the crank stainless steel, the knob German oak, treated with a natural wax-oil finish. The Engine-Frame inside is Eastman Tritan, BPA-free. Two micro ball bearings with rubber seals keep the run smooth over the years. What is the Hammerhead burr set especially suited for?

The hexagonal block blade geometry was developed in the Bavarian Burr Lab specifically for larger and denser beans. Pacamara, Gesha and similar varieties are sheared more cleanly. The result is a denser body with focused sweetness and clearly defined fruit aromas. Other beans work just as well – the Hammerhead simply plays out its particular strength with the large ones.

How does Hammerhead differ from Nitro Blade and Tigershark?

All three burr sets are part of the Comandante Lab Series and differ in geometry. Nitro Blade is the classic, universally designed variant. Tigershark has its own blade architecture. Hammerhead works with the hexagonal block blade and is geared toward larger, denser beans with fruity complexity. Which one is better depends on what you want to experience in the cup – it's not a hierarchy, it's a choice.

Is the grinder also suitable for espresso?

Yes. The C40 MK4 covers the entire spectrum, from French press to espresso. Espresso takes a bit more patience while grinding and fine calibration. A Red Clix axle is a useful addition here, because it halves the step size and makes it easier to hit the ideal setting.

How do I care for the Comandante C40 MK4?

The burr set is cleaned exclusively dry – with a brush, no water. The body is wiped down with a slightly damp cloth. The bean jars can be rinsed with warm water, both are food-safe and flavor-neutral. With normal use, the burr set is low-maintenance for years.

Can I see the grinder before buying?

Yes, gladly – you'll find us at the Zürich store at Hagenholzstrasse 50b and at the Bern store at Gerberngasse 44. Not every model is always physically present in both showrooms – write to us briefly at office@coffeecoachingclub.ch, if you want to be sure.

What's included in the delivery?

Grinder, brown glass bean jar, transparent polymer glass bean jar and crank. Both bean jars hold approximately 40 grams of beans each. Delivery is throughout Switzerland and to Liechtenstein in two to four working days.
