A coffee bean holds over 800 compounds, many of them volatile and sensitive to oxygen. Beans exposed to open air contact while waiting in the hopper gradually lose some of that variety – an effect that becomes more noticeable over days than over hours. A hopper with a tight-closing lid and intact fit keeps this contact to a minimum, before the bean even reaches the Fausto's burrs.
