The Bezzera Crema DE/PID is a compact heat exchanger espresso machine with PID control, volumetric dosing, and rosewood handles. Bezzera has been building espresso machines in Italy for over a century – the Crema brings this experience into a sleek polished stainless steel housing.
Instead of a classic E61 group, the Crema uses Bezzera's own electrically heated BZ brew group. The advantage in daily use: it's ready to brew from a cold state in about five to eight minutes – noticeably faster than a classic E61 machine. The 58mm portafilter is standard size, so common accessories fit.
As a heat exchanger with a heat exchanger, the Crema can brew and steam simultaneously: the 1.5-liter copper boiler provides steam for the milk, while fresh water flows through the heat exchanger to the group. You control the brewing temperature via PID on a scale from 80 to 100 °C and read it on the display. The boiler refills automatically, and the machine switches off if there's a water shortage.
We extract by weight ratio – 1:2 as a starting point, so about 18g of coffee to 36g of espresso – and adjust grind, dose, and temperature until it tastes good to us. There's no right or wrong; the coffee has to taste good to you.
The abbreviation DE stands for volumetric dosing: a flowmeter measures the actual amount of water flowing through, you program two quantities directly on the keypad, the third button dispenses continuously. This makes your shots repeatable, even if multiple people are using the machine. You control the steam via a toggle lever, the "no burn" steam wand remains cool to the touch, and a manometer shows you the pump pressure.
