Nobody needs the EPICA to make good espresso – a simpler setup has long been enough for that. The EPICA makes a different statement. What does pressure profiling via the lever mean?
The lever controls the brew pressure directly via the pump. Starting with low pressure (pre-infusion) and then guiding it up is how you influence which aromas get extracted, and when.
What sets the EPICA apart from an E61 machine?
The EPICA has a saturated group head instead of the E61 group and allows manual pressure profiling via the lever. That gives you more control and, in our experience, a more refined aromatic picture.
