Two mornings, two completely different feelings – and in the end the same question: super-automatic machine or espresso machine? We answer it here as honestly as we do every day in our showrooms in Bern and Zurich.
We are a coffee roastery that has loved one thing above all for years: espresso machines, from the first hand lever to the dual-boiler. But we're just as honest about where our strength ends and someone else's begins. Two Technologies, Two Senses of Time
Technically, both paths describe the same process: hot water presses through finely ground coffee under pressure, dissolving part of the more than 800 aromatic compounds held inside the bean. What differs is who controls this process – a person with a grinder, a scale and a brew group, or a machine that regulates grind size, dosing and extraction on its own.
A super-automatic machine like the Eversys models in our range solves this with systems like Extraction Time Control, which continuously adjusts the brew to the ground coffee so that the thousandth cup of the day tastes like the first. An espresso machine leaves exactly this adjustment to you: you decide on grind size, dosing and often the pressure curve too – and in doing so, feel what temperature, pressure and particle size actually do to the aroma.
What's often underestimated: a large part of the anticipation of coffee happens beforehand, in your head, not just at the first sip – dopamine is released while you're anticipating, not only while you're enjoying. With an espresso machine, this moment stretches across grinding, tamping, waiting for the first drop. With a super-automatic machine, it's shorter, sometimes just a brief glance at the screen while the cup fills. Neither moment is worth more than the other, they simply feel different.
The technology behind it, by the way, changes little about the actual taste experience: what you perceive as aroma arises largely through retronasal olfaction – aroma compounds rise through the throat to the olfactory mucosa as you swallow, regardless of whether the cup was filled by hand or automatically. The difference isn't in the last sip, but in the way that leads there. In the end, little about this is complicated: espresso is complex, but not rocket science – on either path.
A Decision for the Feeling, Not Just the Coffee
Nobody needs an espresso machine to wake up in the morning – a good super-automatic machine does that just as reliably, often even faster. Whoever still chooses the espresso machine isn't primarily choosing a different espresso, but the presence of the machine on the counter, the sound of the grinder in the morning, the feeling of being part of the preparation yourself. That's not a rational decision, it's an emotional one – and both sides of it are completely legitimate.
The other direction is just as legitimate: whoever wants a super-automatic machine often simply wants good coffee without the ritual around it – for an office where twenty people have different preferences, for a lobby where nobody has time for a manual, for a concept store that wants to offer barista-level coffee without training its own staff to do it. That's a lifestyle too, just one that puts efficiency instead of ritual at its center. Our opinion on this is one of many: we're especially fond of the espresso machine, but that doesn't make the other path any less right.

Who the Super-Automatic Machine Is the More Honest Answer For
The super-automatic machine fits you if you want to provide barista-level coffee in an office of roughly twenty to a hundred colleagues, without anyone needing to be trained for it. It fits just as well in a concept store, a hotel lobby or a small hospitality setup that needs volume and consistency but doesn't want to build its own barista team. If, on the other hand, you're looking for a compact super-automatic machine for your home, we'll be honest with you: that's not our range. Our strength lies with espresso machines for the home – and that's not a knock against compact home super-automatic machines, simply a matter of what we've specialized in. Whoever wants to go that route will find it just as valid elsewhere as they'll find the espresso machine with us.
Who the Espresso Machine Is the More Honest Answer For
The espresso machine fits you if you like taking a few minutes for your coffee in the morning, if the grinding, dosing and watching are already part of the enjoyment for you. That's true for the first espresso just as much as the five-hundredth – experienced or not, both are welcome, because no shot is ever exactly like the one before anyway: the bean is different today than yesterday, so is the humidity, and so are you.
There are no espresso laws here, and certainly no espresso police: whether you choose a single-boiler, a heat exchanger, a lever machine or a dual-boiler is entirely up to your everyday life – how many milk drinks are part of it, how much space you have, how much time you want to take in the morning. The heat-up time belongs to this ritual too: a single-boiler needs around 15 minutes, a heat exchanger about 20, while a manual Flair 58+2 is ready in about 5 minutes. We always describe extraction by weight ratio, 1:2 as our standard between the coffee dosed in and the espresso in the cup, never by time alone.

Whether the coffee ultimately comes from a super-automatic machine or by hand from an espresso machine makes no difference to the bean – what matters is what was roasted into it beforehand.
