Grinding creates small clumps, and where the grounds sit denser, water flows slower – where it's looser, it rushes through. This channeling makes the extraction uneven. With the fine needles of the Weiss Distribution Technique, you reach deep into the grounds, break up the clumps and distribute everything evenly before you tamp.
The Castle is a needle distributor made exactly for this step: needles in, a few turns, and the bed sits loose and level. Tamping and the shot build on that. Espresso is a craft, not a rule – an even bed just makes it more repeatable. Our opinion is one of many.
