Understanding Moccamaster Technology

Copper Heating Element (Brand constant since 1968)
The core of every Moccamaster. Copper conducts heat significantly better than the stainless steel or aluminum heating elements used in standard filter coffee machines, bringing water to 92–96 °C in a continuous flow. This temperature is the SCA-specified specialty coffee brewing range – below 90 °C, the coffee is underextracted (sour, weak), above 96 °C, it is overextracted (bitter). The copper heating element automatically maintains this corridor without sensors or PID electronics.
Spray Head Geometry and Gravity Filtering
The hot water is distributed over a spray head into the conical filter basket – in the KBG Select via the characteristic 9-hole outlet pipe, which ensures even water distribution. Select Switch (KBG Select)
Switch for selecting between a full and half pot. In half-pot mode, the flow time is delayed – the water gets the necessary contact time with the coffee grounds, even if the water quantity is smaller. Otherwise, a half pot would run through in half the time and not be sufficiently extracted. Practical advantage: the same machine can be used effectively for 1–2 cups and for 4–10 cups.

Two different filter sizes, both oxygen-bleached (environmentally friendly bleaching process, no chlorine). No. 1 (80 pieces per pack) fits the Cup One machine. How to Brew on the Moccamaster KBG Select

  1. Dose coffee grounds: Ratio 1:15 to 1:17. For a full pot (1 L) approx. 60–65 g of coffee. For a half pot approx. 30–35 g.
  2. Adjust grind size: Medium-coarse, slightly finer than Chemex and coarser than espresso. On Comandante C40 approx. 18–22 clicks. On 1Zpresso K-Ultra approx. 60–75 clicks. On an electric filter grinder, the corresponding setting.
  3. Insert filter No. 4, rinse briefly with warm water (to remove paper taste), discard water.
  4. Pour in coffee grounds, distribute evenly.
  5. Pour in water: Water tank with cold water, to the mark for the desired number of cups.
  6. Set select switch to full or half pot, turn on main switch.
  7. Wait for brewing time: approx. 6 minutes for a full pot. Machine automatically switches to warming plate.

Cup One Brew: Insert filter No. 1, grind 14–18 g coffee, pour in 250–300 ml water, turn on switch, wait 4 minutes. Auto-off after brewing.

Is the Moccamaster dishwasher safe?

Moccamaster particularly excels with light to medium specialty roasts – the stable 92–96 °C brewing temperature extracts the brighter aromas better than standard filter machines with lower temperatures. Cozy Chocolate and Nutty Delight as medium-dark profiles also work very well, with a dense body and chocolate notes. Currently two machines: Cup One Swiss Version (CHF 228.95–238.95, single-brew, three colors Black/Off-White/Orange) and KBG Select Swiss Version (CHF 268.95–298.95, multi-cup 4–10, four colors Black/Apricot/Brushed/Brushed Brass). Plus original filters No. 1 (for Cup One) and No. 4 (for KBG Select). Other Moccamaster models such as KBGV Select, KB, KBGT, or CDGT are not currently in stock – can be individually checked upon request.

Cup One or KBG Select?

Cup One: for single setups or as an addition to an espresso machine, one cup directly into the porcelain mug, 4 minutes brewing time. KBG Select: for families and office setups with 1–3 people, full pot (1–1.25 L) in 6 minutes, select switch for half pot with adjusted flow time, warming plate. Rule of thumb: if you only need one cup per person daily and no reserve for later, choose Cup One. If you want multiple cups at once or with seconds, choose KBG Select.

Which filter paper do I need – No. 1 or No. 4?

No. 1 is for the Cup One (80 pieces per pack). No. 4 is for the KBG Select and all other multi-cup Moccamaster models with 1–1.25 L carafe such as KB, KBG, KBGT, and CDGT (100 pieces per pack). No. 4 does not fit Cup One or Basket models. Both filters are oxygen-bleached (environmentally friendly bleaching process without chlorine).

What grind size does a Moccamaster need?

Medium – slightly finer than Chemex, significantly coarser than espresso. On Comandante C40 approx. 18–22 clicks. On 1Zpresso K-Ultra approx. 60–75 clicks. On Kinu M47 approx. 4–5 turns from zero point. On an electric filter grinder, the corresponding filter setting. Adjust according to brewing time and taste: if it runs through too quickly = grind a little finer.

What is the coffee to water ratio?

Standard 1:15 to 1:17. For a full KBG pot (1 L) approx. 60–65 g of coffee. For Cup One (approx. 250–300 ml) approx. 14–18 g. For a stronger cup, more coffee (1:14), for a weaker cup, less (1:18).

What do ECBC and SCA certification mean?

The European Coffee Brewing Center (ECBC) and the Specialty Coffee Association (SCA) are independent industry organizations that technically test filter coffee machines. They check brewing temperature (a corridor of 92–96 °C for at least 50% of the brewing time), contact time (4–8 minutes), water quantity per cup, and even extraction. Machines that pass both tests belong to the smaller group of filter coffee machines suitable for specialty coffee. Both Moccamaster models carried by CCC pass both certifications.

Why is a copper heating element important?

Copper conducts heat significantly better than the aluminum or stainless steel heating elements found in cheaper filter coffee machines. This means the water reaches the specialty coffee brewing temperature (92–96 °C) faster and can maintain this temperature stably. Inexpensive filter coffee machines with aluminum heating elements often only reach 85–88 °C, which leads to under-extraction (coffee tastes sour or weak, does not release all its aromas).

How long does a Moccamaster last?

Moccamaster offers a 5-year manufacturer's warranty. The machines are designed for repairability – all spare parts (glass carafe, filter holder, heating element, spray head) are individually available. With home use, Moccamaster machines usually last for several decades. In case of service, CCC is the first point of contact and coordinates repairs and spare parts directly with Technivorm.

Is the Moccamaster dishwasher safe?

The machine itself is not (electrical device). The glass carafe, filter holder, and filter holder lid are washable in the top rack of the dishwasher. Occasionally descale with hard water residues (with Moccamaster-recommended descaler or citric acid solution) – this extends the lifespan of the copper heating element.

Can I see a Moccamaster live in Switzerland before buying?

Yes – subject to availability in the showrooms in Bern (Gerberngasse 44) and Zurich Oerlikon (Hagenholzstrasse 50b). You are welcome to bring your own beans – the tactile quality and brewing sound of the Moccamaster cannot be conveyed through photos. Not all color variants are simultaneously on site, a quick inquiry is sufficient.

Roastery Tip

Moccamaster particularly excels with light to medium specialty roasts – the stable 92–96 °C brewing temperature extracts the brighter aromas better than standard filter machines with lower temperatures. Wild Peach with peach notes and Bright Cassis with cassis aroma come through with good fruit clarity on the KBG Select. Cozy Chocolate and Nutty Delight as medium-dark profiles also work very well, with a dense body and chocolate notes. For the Cup One with 18 g of beans to 300 ml of water, 1:17 is a good starting point; for a full KBG pot of 60 g to 1 L (1:16), it's a classic specialty standard. One of many possibilities.
