Explore more →Every bean that passes through the Pico touches these two burrs first. Conically ground, 39 mm in diameter, matched to within a tenth of a millimetre – this is the point where the whole bean becomes the grounds that later sit in the basket.
After many kilograms of ground coffee, the sharpness of the edges changes. The grounds turn into fine dust instead of even particles, extraction becomes less consistent, and the grind setting needs constant readjusting just to stay at the same result. A new burr set brings the cutting edges back to factory level.
Conical burrs cut the bean rather than tearing it apart – with sharp edges this creates an even, clump-free grind that water can flow through without channelling. Once the edges dull, more fines and a wider spread in particle size appear at the same time – two effects that show up in the espresso as a less consistent, less predictable extraction, even when grind setting and dose stay the same.
