The inner burr doesn't sit directly on the shaft but on a holder. This part, part number F.6.029.01, determines whether the burr runs perfectly centred and flat. If the holder is worn out, even the most expensive new pair of burrs won't help.
You notice it in the result, not on the part itself: the grind setting can no longer be fine-tuned, there's suddenly a world of difference between two notches, and the ground coffee becomes uneven. If you only replace the burrs, you'll have the same problem again before long.
The burr has play on its mount. The grind setting jumps or can't be set reproducibly. The grinding mechanism runs unevenly or knocks. Or the holder was visibly damaged during the last burr change, for example at the screw eyes.

For workshops and for roasteries that service their grinder themselves and want to do a clean job when changing the burrs. If you're tuning a grinder for reproducibility, you'll come across this part sooner or later.
The grinding mechanism has to be opened for this, and afterwards the zero point needs to be found again. The grinder must be disconnected from the mains beforehand. We don't provide step-by-step instructions here – rotating grinding mechanisms are no place for experiments.
From our workshop in Bern and Zurich: After every intervention in the grinding mechanism, we first grind 100 grams of old beans and throw them away before setting the grind – our routine, not a manufacturer requirement. Otherwise you end up adjusting to metal dust instead of coffee. After that, we like to calibrate with Nutty Delight, Cozy Chocolate or Very Nutty from our coffee beans.
