Freshly ground coffee, the moment right before the shot: the aroma rises, the grounds fall loose and even into the portafilter, and you can already feel that this espresso is going to be dense and aromatic.
What makes the Jay special
At its heart sit 68mm flat burrs made from hardened steel. La Marzocco mounts them from the back, without screw holes in the cutting surface, at a 45-degree angle – that keeps retention low, so almost only freshly ground coffee ends up in the cup. The particles come out even, and evenness is the key to a clean extraction. The grind setting is stepless, the dose programmable, around 18 g land in the portafilter in about five seconds. Burrs are like engines in cars – subjective, there's no single best. That's our observation, others see it differently.
