GB5 and GB5 X – the established workhorse line

The Strada line is La Marzocco's professional workshop machine. The GB5 (CHF 15,899 for 3-group) is the classic GB5 design with established operating logic. The GB5 X (CHF 18,899 for 2-group, CHF 20,799 for 3-group) introduces the X-Generation with touchscreen, integrated workflow functionality, and Grind-by-Sync capability. Functionally, the same saturated brew group, the difference lies in the operating interface and data integration.
What is the Strada workflow with Manual Paddle (S)?
The Strada S has a paddle per group, with which you manually modulate the brew water pressure during extraction. Workflow: pre-infusion with low pressure (approx. 2–3 bar), main extraction with full pressure (9 bar), optional decline towards the end. For light specialty roasts, where pressure profiling changes the acid-sweet character, a real tool. For competition-oriented baristas and specialty bars with profiling demands.
What is the Strada X advantage over the Strada S?
The Strada X has programmable pressure profiles per group instead of a manual paddle. You program a profile (e.g., pre-infusion 2 bar for 8 seconds, then 9 bar for 22 seconds, then decline to 6 bar), and the machine repeats it exactly. Advantage: reproducible between shots, every team member delivers the same profile. Disadvantage: less hands-on feel than the manual paddle. For cafés with consistent specialty profiles across changing shifts.
Why is the KB90 better for high volume?
The KB90 has an ergonomic innovation: the portafilter is inserted straight in instead of twisted ("Straight-In"). This saves about one second per shot – multiplied by 200–500 shots per day, this amounts to several minutes of cumulative time savings and noticeably reduced wrist strain for baristas. What do "AV" and "MP" mean?
AV = Auto Volumetric: automatic brew water dosing. You program the water quantity for single and double shots per group, and the machine stops automatically.
