Burrs age quietly. There is no single day on which they break, but half a year in which the espresso gets flatter step by step. You adjust finer, the time is right again, but the body doesn’t come back. The cup gets thin, sweet notes disappear, and at some point the dosing varies more than it used to.
That’s when the burrs are dull. Ceramic lasts longer than steel and stays cooler while doing so, but it is a wear part too. The pair is supplied – burrs are always replaced in pairs, because a new burr never runs cleanly against an old one.
When, over months, you have to keep setting finer to hold the same extraction time. When the espresso becomes thin and flat even though bean, dose and water have stayed the same. When the variation from shot to shot increases. And when the cutting edges are visibly rounded or chipped. Before deciding, it’s worth checking the simpler causes: old beans, a dirty coffee path or a worn filter basket cause similar symptoms.

Burrs must sit flat and free of tension, otherwise they run unevenly and are worn out within a few weeks. After the change, the grind setting has to be completely readjusted and the grinder run in. We recommend having the replacement done by a specialist – write to us and we’ll arrange it through our service.
For businesses with a Swift that has been in service for a while and whose cup no longer delivers what it used to – and for service companies doing a complete overhaul of a Swift.
Matching parts for the Swift are the knob for grind adjustment and the complete bean hopper of the Swift Mini. To clean the grinding mechanism, we use Puly Grind Verde. More under La Marzocco Pico and Swift spare parts and Coffee grinder accessories and spare parts.
When fitting new burrs, we note the date and the counter reading in the machine file. Next time, you then know how many kilos the burrs have really managed in your own business – a far more useful figure than any guideline from a manual. This is our routine in Bern and Zurich, not a manufacturer’s requirement. We run them in with Nutty Delight and then like to dial in with Cozy Chocolate or Very Nutty. All roasts under Coffee beans.
Service parts are excluded from exchange and return. They are sourced specifically for each order and cannot be resold after installation or a trial fitting on the machine. So before ordering, check the model, year of manufacture and serial number of your machine – or drop us a short message and we’ll clarify the fit together. Your rights in the case of defective goods remain unaffected.
Two. The pair is supplied, because burrs are always replaced together.
Ceramic is harder and stays cooler while grinding. How long it lasts in your business depends heavily on throughput and roast – we deliberately don’t give a universal figure.
Yes, completely. New burrs grind differently, and they also need a running-in phase until the grind is stable.
We don’t recommend it. If they don’t sit exactly flat, they run unevenly and wear out quickly. This is a job for a specialist.
Yes, in Bern (Gerberngasse 44) and Zurich (Hagenholzstrasse 50b) you can see it in person.
