Why the Number of Prongs Matters

A Chasen with many prongs distributes the powder more evenly and creates a creamier foam than a whisk with fewer, coarser prongs. The purple bamboo is handcrafted, and each piece is slightly different. The whisk is moved in quick W or M motions until fine bubbles form on the surface.

The prongs are the fine bamboo bristles of the whisk. 80 prongs create a particularly dense, fine foam and distribute the powder evenly. Whisks with fewer prongs yield a coarser texture.

How do I care for the Chasen?

After each use, rinse under lukewarm water, without detergent and never in the dishwasher. Let it dry on a Chasen holder or lying down, so that the prongs retain their curved shape.

Is it suitable for Usucha and Koicha?

Yes. For Usucha, the thin matcha, whisk quickly until foam forms. For Koicha, the thick matcha, stir more slowly to a smooth paste. Both can be achieved with this whisk.
