A gooseneck kettle is the precision tool for pour-over and filter coffee. The long, narrow gooseneck spout gives you the control you need for controlled, slow pouring into a V60, Hario SWITCH or Chemex. Instead of an uncontrolled stream of water from a standard kettle, a gooseneck allows you to pour precisely where you want – center, outer edge, circular motion, narrow or wide stream. This is the basis for reproducible pour-over profiles.

Stovetop Class
Hario V60 Buono Kettle – the classic pour-over icon
The Hario Buono family is the ultimate pour-over classic. Stainless steel construction, stovetop compatible, perfectly shaped gooseneck for controlled water flow. Three sizes:
- Hario V60 Buono Kettle 1.0 Liter (CHF 59) – Standard for 1–2 cups
- Hario V60 Buono Kettle 1.2 Liter (CHF 59) – slightly larger, for family setup

Stovetop Advantage: no electricity needed, durable construction without electronics, significantly cheaper than electric versions. Disadvantage: no integrated temperature control – you have to measure the water temperature externally with a thermometer, which delays the process in a specialty workflow.

Electric gooseneck kettle with temperature setting from Flair Espresso. The most accessible entry into electric gooseneck design – with concrete specialty-grade temperature control, compact design, and Flair's typical construction logic. Suitable for Flair lever brewers (Flair Pro 3, Flair 58+2) and all other pour-over setups.

For specialty workflow at a competition level, this is the established choice. Currently available in the standard black version.

Temperature Values in Specialty Workflow
Different brewing methods require different water temperatures. Rule of thumb:
- Light Roasts (Specialty, Filter): 93–96 °C – higher temperature for full extraction of developed aromas
- Medium Roasts (Espresso-oriented): 92–94 °C – balanced extraction-vs-bitterness profile
- Dark Roasts (classic): 88–92 °C – lower temperature reduces bitter components
- Tea: 80–85 °C for green tea, 90–95 °C for black tea – electric gooseneck kettles are often ideal tea kettles too
For specialty workflow, the extra cost for an electric gooseneck with precise settings is therefore worthwhile. For classic brews with standard beans, a stovetop kettle with a thermometer is often sufficient.

Frequently Asked Questions
Why do I need a gooseneck for pour-over?
The gooseneck allows for a controlled, narrow stream of water, which lets you pour precisely where you want – centrally, at the edge, in a circular motion. With a standard kettle, the stream hits the coffee bed uncontrollably, causing channeling and leading to inconsistent extraction. For classic filter coffee from a pour-over setup, a gooseneck is practically a must.
Stovetop or electric – which is worth it?
For beginners and budget setups: Stovetop (Hario Buono from CHF 59). You heat on the hob, measure the temperature with a thermometer – it works well, it just takes a little longer. For specialty workflow: electric with integrated temperature control. The convenience of setting and reproducibly hitting an exact temperature for each brew is noticeable in daily workflow. Plus: electric kettles keep water at the set temperature without it cooling down.
Hario Buono 1.0L or 1.2L?
Functionally almost identical, same price (CHF 59). 1.0L: for 1–2 cups per brew, slightly more compact. 1.2L: for 2–3 cups or Chemex setup. For solo workflow or travel: 1.0L. For family setup or Chemex: 1.2L. Compare them directly in hand in the showroom.
What are the Varia Aura's smart features?
The Varia Aura (0.8L and 1.5L) is an electric gooseneck kettle with app integration via Bluetooth. Features: precise temperature setting in 1-degree increments (40–100 °C), brewing profiles in the app, water temperature hold, low power consumption in standby. For home setups with modern workflow demands, a worthwhile specialty investment.
Brewista Artisan or Varia Aura?

Which capacity is right?
Rule of thumb: per 100g of water for 1 cup. 0.8L: 1–2 cups per fill, ideal for solo setups. 1.0L: 2–3 cups, standard home setup. 1.2L–1.5L: 3–5 cups, family setup or Chemex design. If you only need 1–2 pour-overs daily, opt for the smaller version – less water heating time, less energy consumption.
What temperature for V60 brewing?
For light specialty roasts: 93–96 °C. For medium roasts: 92–94 °C. For darker roasts: 88–92 °C. Light beans like Wild Peach or Bright Cassis require higher temperatures for full flavor development. In the showroom, we calibrate temperature, grind size, and bean for your optimal pour-over.
