No button, no programmed quantity – you feel the pressure build in the puck, hold it, then gently let it run out at the end. The espresso comes out thick, the crema closes. With the MP, you are part of the extraction, not just the trigger.
The GS3 MP is the Manual Paddle version of the GS3 – built in Florence, with the same saturated brew group and dual boiler as its sister, but with mechanical flow control instead of electronic dosing. At Coffee Coaching Club, we are both a partner of La Marzocco and a coffee roastery.

MP stands for Mechanical Paddle. There is no portion programming. A flow-regulating valve changes the brew pressure depending on the paddle position – you control pre-infusion, pressure build-up, and fade-out by hand. This is not for a quick button press, but for those who want to work with and taste the pressure profile.
Beneath it works the same technology as in the GS3: the saturated brew group, where the brew head is permanently surrounded by hot water, maintaining very stable temperatures. Plus the dual boiler with separate circuits for brew water and steam, both PID-controlled – brewing espresso and frothing milk simultaneously, without waiting. In our roastery, we observe that saturated brew groups deliver a more refined aroma profile than E61 – our view, one of many.

The MP gives you full manual control via the paddle – for those who like to play with the pressure profile. If you prefer programmable shot volumes and brewing at the touch of a button, choose the GS3 AV (Auto-Volumetric). Same core technology, different workflow.
The grinder makes the biggest difference. For maximum precision, Weber Workshops or Option-O, from the same house the La Marzocco Swan or the La Marzocco Pico. Extraction by weight ratio (1:2 as a starting point) with a scale from Normcore or Acaia. Our machine comparison shows which La Marzocco machine suits you.
The GS3 MP is produced upon order. The purchase includes a barista workshop with us in Bern (German or English) – as chemists and aroma developers, we approach coffee and preparation from a slightly different angle, so your espresso at home is a success right away. For delivery (at an extra charge), we conduct the workshop at your place. Afterwards, you receive Swiss warranty and support. Delivery throughout Switzerland and Liechtenstein, Click and Collect in Bern and Zurich; for this class, we recommend pickup. Financing via Heylight possible. The MP rewards patience: with paddle control, you can execute a long, gentle pre-infusion, which is particularly well-suited for dense roasts. Our Cozy Chocolate becomes even rounder and more chocolatey this way. For nutty depth with milk, Nutty Delight, for maximum body, Very Nutty. Those who experiment with the pressure profile will bring out exciting fruity notes from the light Wild Peach. This is our recommendation, one of many.
