Ceremonial Matcha – Matcha7
A deep, vibrant green that turns into a fine, velvety foam within seconds when whisked with a bamboo whisk. The aroma is fresh and grassy, with a calm sweetness beneath. The first sip is smooth, full of umami and without harsh edges – a drink you do not rush, but sip slowly.
This matcha comes from Uji in Kyoto Prefecture, the home of Japanese matcha for centuries. Only young leaves from the first spring harvest are used, picked by hand and slowly ground on granite until a silky powder forms that dissolves effortlessly in water. On the palate it shows a round, velvety body, a light natural sweetness and a grassy freshness that lingers.
How mild matcha tastes has a lot to do with temperature. Very hot water extracts the astringent tannins quickly and strongly. At around 75 to 77 degrees, the aromatic window opens for umami and sweetness instead. Taste and smell are inseparable here: a large part of what we experience as aroma only arises retronasally, when volatile compounds rise to the olfactory mucosa while swallowing. That is why a well-prepared matcha feels so layered.
You can also feel the calm alertness that accompanies matcha. Caffeine and the amino acid L-theanine occur together here. According to Matcha7, a 2 gram serving contains roughly as much caffeine as an espresso, so it fits best from the morning to the early afternoon. With matcha there is no right or wrong; it has to taste good to you. And because water, your daily form and mood are constantly changing, every bowl tastes a little different. That is not a limitation; that is the beauty of it.

From tea field to bowl
Good matcha is no coincidence. Matcha7 describes four steps that shape this matcha.
Shading
Around four weeks before the harvest, the tea fields are shaded. Less light means more chlorophyll and amino acids in the leaves. This creates the deep green and the natural sweetness.
Harvest
A tea field is harvested three times a year. For this matcha, Matcha7 uses only the most sought-after harvest: the first one in spring, which in Uji runs from late April to May.
Steaming and drying
Right after picking, the leaves are steamed and dried. Steaming stops oxidation, drying preserves freshness.
Stone grinding
The leaves are ground slowly on granite mills, around 30 grams per hour. The powder becomes so fine that you do not need to sift it before whisking.

How to prepare it
Put 2 grams of matcha into a bowl and pour in 40 milliliters of water at 75 to 77 degrees. With the bamboo whisk, whisk the matcha for 10 to 15 seconds in a zigzag motion, not in circles, until a fine, dense foam forms on the surface. A fork or spoon creates hardly any foam. For a matcha latte, add the whisked matcha to warm, frothed milk. Both are right – take whatever you feel like.

Who this matcha is for
For everyone who wants to create a calm moment in their day, whether as a morning ritual, a break in between or an alternative to coffee. Whisked pure, it reveals its full depth; as a latte, it becomes softer and rounder. Those who already love matcha will find a pure, traditional quality here, and those who are just discovering it will find a mild, accessible matcha. Our assessment is just one of many – in the end, your taste decides.
You can order the matcha online throughout Switzerland and Liechtenstein, and in Bern and Zurich also with Click & Collect. If you prepare espresso as well as matcha, our espresso machine advisory tool offers some orientation.
The right tools
You can find bamboo whisks, bowls and complete sets in our Tea Accessories Collection. To make sure the water reliably hits the right temperature, the kettles from our Varia Collection help: for everyone who wants an affordable and precise kettle, the Varia AURA Standard. If you want temperature control to the degree, the AURA FLUX. And for a creamy matcha latte, a milk frother from our Subminimal Collection helps.
Frequently Asked Questions
What water temperature does matcha need?
We recommend 75 to 77 degrees; Matcha7 states a maximum of 80 degrees. Hotter water extracts more astringent compounds, while slightly cooler water brings out umami and sweetness.
How much matcha do I use per bowl?
Matcha7 recommends 2 grams to 40 milliliters of water, whisked for 10 to 15 seconds in a zigzag motion. More powder with little water tastes stronger and grassier, less powder tastes finer.
Does ceremonial matcha taste harsh?
Good ceremonial matcha is defined by umami and a light sweetness. It usually turns harsh because of water that is too hot or too much powder with too little water.
How do I store matcha?
Airtight, dark and cool; the bag is resealable. After opening, the matcha tastes best within 3 months. If you need longer, store it tightly sealed in the fridge, not in the freezer.
Is this matcha also suitable for lattes?
Yes. Whisk the matcha with a little water and pour it into warm, frothed milk. In milk it comes across softer and rounder.
Can I see the matcha in person before buying?
Our showrooms in Bern (Gerberngasse 44) and Zurich (Hagenholzstrasse 50b) show a wide selection, but not our entire range – the display changes. Drop us a quick line at [email protected] before your visit, and we will check whether the product you have in mind is currently there. Delivery within 2 to 4 working days to all of Switzerland and Liechtenstein. For questions, you can reach us during business hours or by email at [email protected].
Tip from the roastery: As a coffee roastery, we think in terms of rituals, and for many in our community, morning matcha is just as much a part of the day as afternoon espresso. If you also reach for beans on such days, our dense, full-bodied roasts like Cozy Chocolate or Nutty Delight fit well into the day. This is our recommendation, one of many.
