The foam settles over the rim in a soft dome, and the wall holds the warmth as you take your first sip.
Milk foam is more delicate than espresso. It lives on temperature and texture, and it loses both within a short time against a cold cup wall. Stoneware behaves differently from thin porcelain here: it absorbs energy when you preheat it and releases it slowly, instead of drawing it away from the drink. As a result, the foam stays fine-textured for longer, and the sweetness that develops from the lactose as you froth stays present for longer.
It is made by hand from stoneware, one at a time, and carries a subtle ECM logo. Because every cup goes through production individually, the glaze, colour and surface are never exactly the same. If you buy several, you get a family, not a mass-produced set – that's the idea behind it.
Perception depends more on the vessel than you might expect. Colour, material and feel measurably shift the experience before the drink even reaches your tongue. A warm, matte body makes a cappuccino seem rounder than cool, smooth white – the same milk, the same bean, a different picture in your head. Then there's the limbic system: vessels we like to pick up become linked with memory and mood, and that rubs off on the taste.

For anyone who treats cappuccino as a moment of its own and not as a bigger espresso. Because the cup comes individually, you can take exactly as many as you need – two for mornings for two, four when guests are over, or a single one that's yours.
Nobody needs a handmade cup. You either want it – or you don't, and we respect both. If you'd rather have a set where every piece matches, industrially made porcelain will serve you better, and that's a good decision too.
Good milk foam starts with the pitcher. For anyone who wants an affordable, precise milk pitcher: the pitchers from Normcore. If you want more care put into the spout and balance, you'll find it at Weber Workshops.
And because everything starts with the grind: burr sets are like car engines, subjective, there's no single best. For anyone who wants an affordable, good grinder, the VS3 from our Varia Collection or a hand grinder from Comandante is a solid way to go. No, ECM recommends washing by hand. That way, handmade stoneware and its glaze stay beautiful for much longer.

For cappuccino, we reach for beans that hold their own against milk. Nutty Delight and Cozy Chocolate carry caramel, chocolate and nut so densely that they still come through under the foam. If you like it even bolder and without any acidity, go for Very Nutty. And if you'd like to try a fruity cappuccino for once, give Wild Peach a go. That's our recommendation, one of many; any bean you enjoy is the right one.
