ECM Exacto – Grind-by-Weight Espresso Grinder with 64 mm Steel Burrs

Six seconds of humming, and eighteen grams are sitting in the basket – exactly eighteen, with no scale beside it and no topping up.

The aroma comes straight away. A freshly broken bean smells different from anything that has been sitting in the hopper for a while, and grinding opens a window: volatile compounds that were locked in the cell structure are released into the air. Much of what you notice in this moment will later arise retronasally – as you swallow, the aroma compounds rise through the throat to the olfactory mucosa. Without a sense of smell, all that would be left of the espresso is the basic taste. And the waiting is part of it: dopamine is released in anticipation, not only with the first sip.

What makes the Exacto different

It grinds by weight. A scale sits inside the unit, and the grinder stops when the set amount is reached – not when a time has run out. That sounds like a small difference, and in everyday use it's a big one: beans absorb moisture and release it, they age, they behave differently on a humid July day than in dry February. A grinder that doses by seconds gives out a little less one time and a little more another, for the same running time. One that weighs gives eighteen.

Because espresso is extracted by weight ratio – 1:2 as a starting point, so eighteen grams in, thirty-six grams out – this removes the biggest unknown. What remains is the part you want to shape: grind size, distribution, temperature.

Three operating modes are ready on the touch display – Grind by weight, Grind by time and a manual mode. The grind adjustment is stepless with a digital readout, so you can see where you are and find your way back. For saved portafilters, grinding starts automatically as soon as you place them in the height-adjustable fork.

The burrs measure 64 mm and are made of steel. Particle size and its uniformity determine the quality of the extraction – the narrower the distribution, the more predictably the compounds dissolve. The motor turns at 1350 revolutions per minute; a higher speed tends to bring more body into the glass, a lower one is gentler on delicate compounds. In the end, grinding units are like car engines – subjective, and there is no best one. Our opinion is one of many.

The coffee spout can be removed without tools, the motor is quiet and mounted to minimise vibration, and the adjustable Barista Lights illuminate the portafilter while grinding.

Who it's made for

For everyone who doesn't feel like doing sums in the morning and still wants to know what's in the basket. If you've been working with a scale and a dosing cup so far, you'll notice the difference on the first day – not because the espresso suddenly tastes different, but because one step disappears and your attention moves to where it achieves more.

It suits E61 machines just as well as saturated groups, and it suits people who drink one espresso a day just as well as those who make six. No shot can be replicated – bean, humidity and person change every day. That isn't a limitation, it's the beauty of it. A grinder that weighs takes one of these variables off your hands, no more and no less.

A grinder alone doesn't make an espresso yet. Frequently asked questions

How precisely does the Exacto really dose?

The grinder grinds by weight rather than by time and stops at the set amount. In practice this means: you set eighteen grams and get eighteen grams, even if the bean is two weeks older than yesterday. The grinding output is about 18 g in 6 seconds.

Does my portafilter fit in the fork?

The fork is height-adjustable and takes almost all common portafilters – 58 mm as well as smaller sizes. With saved portafilters, grinding starts automatically as soon as you put one in.

What is the difference between INOX and BLACK?

Technically, nothing. INOX is the polished stainless steel housing, BLACK the black-painted one. Both have the same 64 mm steel burrs, the same motor and the same touch display. It's a decision about how the grinder looks on your counter – and that's a perfectly legitimate reason.

Can I see the ECM Exacto live before buying?

That depends on whether the ECM Exacto is on display right now. Our showrooms in Bern (Gerberngasse 44) and Zurich Oerlikon (Hagenholzstrasse 50b) show a wide selection, but not our entire range – it is too large for that, and the display changes. Do I also need a coffee scale?

Not for dosing into the basket. For the shot itself, yes – we describe espresso by weight ratio, 1:2 as a starting point, and for that you need a scale under the cup.

When do I need to change the burrs?

Steel burrs have a long service life. When a change makes sense depends on throughput, and it shows in the cup before it shows in numbers: the grind has to be set finer and finer to reach the same ratio.

Cozy Chocolate and Nutty Delight do that well – dense, round, chocolate and nut, and if the grind is off, you taste it immediately. If you're looking for maximum body without any acidity, reach for Very Nutty.
