Mahlkönig 80 mm Cast Steel Burrs – E80S / PEAK
Fresh cutting edges, even grounds, and the espresso runs again the way the grinder was tuned. Original 80 mm burrs in hardened cast steel for the Mahlkönig PEAK, E80S and E80S GbW.
With every kilogram of coffee the cutting edges lose sharpness. The grind becomes less even, and the shot changes at the same setting. Particle size and uniformity determine how evenly the water extracts, and with it the body and sweetness in the cup.
According to Mahlkönig, the set also fits the E80W GbS as well as the Ditting 804 Lab Sweet and 807 Lab Sweet. For us, burrs are like engines: subjective, there is no objectively best one. Our opinion is one of many.

Frequently asked questions
When should I replace the burrs?
When the grounds become less even, you have to grind finer and finer at the same dose and brew ratio, or the taste fades. Lifetime depends on volume, grind size and beans, so we do not quote a fixed figure.
Do the burrs fit the PEAK and the E80S GbW?
Yes. According to Mahlkönig and retailer information, set 105780 fits the Mahlkönig PEAK, E80S and E80S GbW.
Do they also fit a Ditting grinder?
According to Mahlkönig, they fit the Ditting 804 Lab Sweet and 807 Lab Sweet. For other models we check the fit in advance, write to us at [email protected].
Can I see the burrs before buying?
You can see Mahlkönig grinders live in our Zurich Oerlikon showroom (Hagenholzstrasse 50b). The burrs can be picked up via Click & Collect in Bern (Gerberngasse 44) or Zurich.
Tip from the roastery: New burrs are the right moment to dial in your recipe again. From our coffee roastery we recommend Cozy Chocolate and Nutty Delight: full-bodied, with chocolate and nut.
