Why flow rate and ratio make the difference
In pour-over, pour speed determines how long the water stays in contact with the coffee – and with it, the extraction. Pour very fast, and the water runs through before it can pick up the sweet, soluble compounds; the cup stays thin. Pour very slowly, and the water sits in the bed longer, dissolving increasingly bitter compounds. There's no rigid right or wrong here – what matters is that the cup tastes good to you. The flow rate display puts that feel in your hands, and the ratio calculator shows you at any moment whether you're at 1:15 or 1:16. That makes your recipe reproducible, without any mental math. Three modes for your workflow
