The beans catch, the sound of the grinder becomes even and bright again – and what falls out at the bottom is loose and fluffy instead of clumpy.
Nobody needs new burrs as long as the cup tastes good. You want them when you notice that the grinder needs more time for the same dose and the shot becomes less steady. This decision is yours, and we respect it either way.
Particle size and uniformity determine the quality of the extraction – more than almost anything else in the setup. Sharp cutting edges cut the bean, blunt ones crush it. A blunt burr produces a wider range of particle sizes: very fine particles release too quickly, coarse ones too slowly, and in the cup the two overlap. A fresh pair cuts cleanly again, and the grounds fall more loosely into the portafilter.
Burr sets are like car engines – subjective, and there's no best one. Some like the denser, rounder body, others the clarity. Speed plays a part too: higher RPM tends to produce more body, lower RPM is gentler on delicate compounds. That's our view, one of many.
What arrives in the end, you experience mostly retronasally – aroma compounds rise through the throat to the olfactory mucosa as you swallow. That is why a more even grind comes across not just as technically cleaner, but simply as sweeter and rounder.

For anyone who runs a 54 mm grinder from ECM or Profitec and wants to bring the cut back to where it started. How long a pair lasts depends on the volume and the roast – darker, oily beans put different demands on the edges than light ones. No setup is too modest for this: a well-maintained grinder that cost little grinds more cleanly than a neglected one that cost a lot. The swap itself is manageable, and if you'd rather watch someone do it, come by in Bern or Zurich.
You'll find the matching grinders in our coffee grinder collection, more accessories under coffee grinder accessories and spare parts. Because the difference only shows when you weigh: for anyone who wants an affordable and precise scale, Normcore is a good choice; if you'd like an app, flow-rate display and Bluetooth, look at Acaia. For everything around dosing and distribution, it's worth a look at barista equipment.
The manufacturer lists the ECM C54, the ECM C54 Automatik as well as the Profitec M54 and the Profitec Twist. Other 54 mm grinders use different hole patterns and inner diameters, so 54 mm burrs are not interchangeable between them. If in doubt, send the item number of your grinder to [email protected] – we'll check it before you order.
The grinder takes noticeably longer for the same dose, the grounds become clumpier, and you have to keep setting the grind finer to hold the same shot time.
A pair, so both burrs. Burrs are always replaced as a set so that the cutting geometry matches.
Yes. The zero point shifts with new burrs, so you set the grind size again after fitting them and let the first doses break them in. As a starting point we work with a brew ratio of 1:2, never by time alone.
Our showrooms in Bern (Gerberngasse 44) and Zurich (Hagenholzstrasse 50b) show a wide selection, but not our entire range – the display changes. Drop us a quick line at [email protected] before your visit, and we will check whether the product you have in mind is currently there.
2 to 4 working days to Switzerland and Liechtenstein. Click and Collect in Bern and Zurich Oerlikon is also possible.
A fresh cut shows best with beans that have plenty of body. From our coffee roastery, Cozy Chocolate and Nutty Delight run through full-bodied, dense and round. If you're after maximum body without any acidity, stay with Very Nutty; if you're looking for a fruity experience, Wild Peach lets you discover a lively peach note. That's our recommendation – one of many. Any other bean you enjoy works just as well.
