The grinding mechanism is the part of the grinder that does the actual work. Between its cutting edges the bean is broken up and brought to size, and how evenly that happens decides every espresso that later runs through the portafilter. This assembly is the complete grinding mechanism for the Swan, part number 1301.
A grinding mechanism does not go dull overnight. First the shot takes a few seconds longer, then the grind has to be set finer step by step to keep the same time. Suddenly there are clumps next to fines in the grounds, the crema turns pale and the cup tastes flatter, although nothing else has changed.
The grinding mechanism is due when the grind setting keeps drifting towards fine to hold the usual extraction time, when the grounds look uneven, when the grinder has become louder or runs hot, when a metallic noise appears while grinding, or when chipping and burring are visible on the cutting edges.

The grinding mechanism sits inside the unit, directly on the drive. Before opening, the grinder is disconnected from the power supply and the bean hopper is emptied. After installation, the zero point has to be found again and the grind worked in from coarse to fine – never the other way round, otherwise the new cutting edges run into each other. We deliberately do not give step-by-step instructions here.
For businesses that grind large quantities on the Swan every day and treat the replacement as a plannable maintenance step instead of waiting until the cup becomes noticeable.

From our workshop in Bern and Zurich
After installation, we run around half a kilo of less expensive beans through before we dial in. New cutting edges need this run-in, otherwise you end up chasing a grind setting that is still changing by itself – that is our routine, not a manufacturer specification. For running in we like to use Very Nutty, and we then dial in on Nutty Delight or Cozy Chocolate. The full selection is under Coffee beans.
No returns
Original spare parts are excluded from exchange and return. They are procured specifically for each order and cannot be resold after installation or a trial fit on the machine. So before ordering, check the model, year of manufacture and serial number of your machine – or drop us a short message and we will clarify the fit together. Your rights in the event of defective goods remain unaffected.
When, besides the cutting edges, the carrier also has play or the burrs no longer run cleanly plane-parallel. If the wear is limited to the cutting edges, the individual burrs are often enough.
Our documentation gives no information on this, and the figure depends heavily on roast, bean and grind setting. We deliberately do not quote a value here that we cannot back up.
No. The UT368 tool set and the UT371 centring plate are separate items and are ordered separately.
Our documentation lists number 1301 for the Swan. It says nothing about other models – send us the serial number of your grinder and we will check the fit.
