New burrs, and the Swan grinds evenly again
Burrs are the only part of a grinder that actually touches the coffee. As long as the cutting edges are sharp, the grind is even; once they go dull, you get more fines and more coarse chunks at the same time – and that is exactly what you taste, long before you can measure it.
This set is the conical inner burrs with Ø 83 mm for the Swan. Part number 1303. A wear part with a clear life cycle: it does not break, it slowly gets worse.
When it is due
Over the months you have to keep setting the grind finer to hold the same extraction time. The espresso tastes bitter and thin at the same time because the grind has become uneven. The grinder gets louder or takes noticeably longer for the same amount. Or, when you look into the grinding mechanism, the cutting edges show visibly rounded edges instead of sharp ridges.

Important for installation
The burrs sit inside the grinder, directly on the drive. We deliberately do not publish step-by-step instructions for this. The change belongs in the hands of a qualified technician who first disconnects the grinder from the mains and afterwards adjusts the burrs properly – incorrectly fitted conical burrs run into each other and are ruined within minutes.
Who it is for
For roasteries and businesses that run their Swan continuously and treat the burr change as plannable servicing, not as an emergency. If you are unsure whether the burrs are really worn out, tell us the amount of coffee that has gone through the grinder – that is a more honest measure than gut feeling.
What goes with it
The same grinder also uses the extruder ejection cone and the holder for the inner burr. Often replaced at the same time during servicing: the PTFE rings Ø 82 mm and Ø 77.5 mm. The grinder itself: La Marzocco Swan. All grinder parts: Coffee grinder accessories and spare parts.
From our workshop in Bern and Zurich
Our own routine, not a manufacturer specification: after every burr change we run two to three doses of inexpensive coffee through and throw them away – new burrs shed fine metal particles at first, and those do not belong in the first cup. Then we set the grind from coarse to fine, never the other way round. For running in we like to use Very Nutty, and for the subsequent calibration Nutty Delight or Cozy Chocolate. The full selection is under Coffee beans. We clean the grinder itself regularly with Puly Grind Verde – coffee oil on the burrs makes them seem dull sooner than they really are.
No returns
Original spare parts are excluded from exchange and return. They are procured to order and cannot be resold once they have been installed or test-fitted on the appliance. So before ordering, check the model, year of manufacture and serial number of your machine – or drop us a line and we will clarify the fit together. Your rights in the event of defective goods remain unaffected.
Are the outer burrs included?
The item description names the conical inner burrs. We do not have a breakdown of exactly how many parts the set contains, and we do not make anything up. Tell us what you are planning and we will clarify it before you order.
When are burrs really worn out?
That depends on throughput and roast level, not on the calendar. A more reliable sign than time is the drifting grind setting: if over the months you have to keep setting it finer to hold the same extraction time, that point has been reached.
What are the burrs made of?
We have no information on the material, and we do not claim anything we cannot back up. On request, we will ask the manufacturer.
Do they fit another grinder with 83 mm burrs?
The diameter alone does not decide – the mount, hole pattern and cone angle must also match. Number 1303 is assigned to the Swan. Send us the serial number of your grinder and we will check it.
Can I see the part at your shop?
Our showrooms in Bern (Gerberngasse 44) and Zurich (Hagenholzstrasse 50b) show a wide selection, but not our entire range – the display changes. Drop us a quick line at [email protected] before your visit, and we will check whether the product you have in mind is currently there. Bring the old burrs with you and we will compare them together.
