La Marzocco lists the set under part number Y.1.009.BK: two side panels and screws. According to the manufacturer, the back of the glass carries a ceramic coating against scratches, and the print on top creates contrast and depth.
The side panel changes nothing about the espresso. It changes how the machine looks on the counter. That is a decision for the eye, and it is just as valid as any technical one.
Inside, the GS3 works with a dual boiler and a saturated group. For us, the saturated group delivers a more refined aroma profile than an E61. That is our observation; others see it differently.

Tip from the roastery: The side panel gives the machine its colour; the bean decides the taste in the cup. For most cups we recommend Cozy Chocolate and Nutty Delight, dense, round and chocolatey.
