Eureka Mignon Stark W – Espresso Grinder with Grind-by-Weight
Choose the dose on the touchscreen, slide the portafilter into the fork, grind: the Eureka Mignon Stark W weighs as it grinds and stops at the gram value you set.
The Stark W comes from Eureka in Florence, where grinders have been made since 1920. It combines 65mm flat burrs with Eureka's patented Instant Grind Weighing technology (IGW), a new universal metal fork and the King Size Grind Dial. As a partner of Eureka, we carry it in Chrome, Matte Black/Chrome and White. The grinding mechanism and technology are identical across all finishes.
Instant Grind Weighing: Grinding by Weight
The coffee is weighed while it is being ground. Eureka states a dose consistency of ± 0.2 grams.
Ready Right Away
Fast calibration makes the grinder ready to use right away. That saves time and keeps your workflow running smoothly, even on busy days.
Anti-Vibration System
The weighing system is unaffected by vibrations, accidental bumps or uneven surfaces. It brings the stability of a café scale into everyday use.
Factory-Calibrated
Ready from the very first dose. The scale is pre-calibrated and works with any portafilter weight, no setup required.
The Details in Everyday Use
Upper 65mm Blind Burr
The upper burr has no screw holes. The system is designed for the lowest possible retention and, thanks to a larger grinding surface, delivers a more even grind.
Diamond Inside Burrs
Eureka's patented process changes the crystal structure of the burrs. According to Eureka, they stay sharp longer and keep the grind size consistent over a very large amount of coffee.
New Universal Metal Fork
The sturdy metal fork holds the portafilter stable and hands-free. According to Eureka, it fits portafilters of all brands and sizes, including bottomless ones (lab-tested).
New Touchscreen
The multicolour, high-resolution 2.8-inch touchscreen responds instantly. You set the dose and adjust further parameters in the submenu.
King Size Grind Dial
The large, patented adjustment dial sets the grind size steplessly and very precisely, making it easy to switch between brewing methods.
Silent Technology
Eureka's Silent Technology lowers grinding noise via an anti-vibration system, without reducing grinding performance. The Eureka catalogue states 70.9 dB.
Dosing Funnel Included
The Mignon dosing funnel keeps the coffee in the basket. Eureka recommends it for single shots from 8 grams, doubles from 15 grams and triples with 20 to 22 grams.

Who the Stark W Is Made For
For anyone who wants to grind every dose by weight, without a separate scale under the spout. Whether that matters more to you than a grinder that doses by time is a question of your workflow, not of right or wrong. Grinders are like car engines, there is no objectively best one. Our opinion is one of many.
You will find more models, including the time-dosed Mignon Stark, in our Eureka collection. Our grind-by-weight grinder comparison gives an overview of grinders with a built-in scale. Other espresso grinders: for anyone who wants to grind affordably and precisely, the Varia VS3 from our Varia collection; for those who want more, the Weber Workshops EG-1 or a grinder from Option-O.
Pairs well with espresso machines, for example from La Marzocco, ECM or Profitec. For tampers, Normcore is affordable and precise, Weber Workshops for those who want more. For puck preparation, WDT tools from Normcore or the Moonraker from Weber Workshops.
Our advice tool and a free consultation appointment help you narrow things down. If you want to compare grinders side by side, book the espresso machine and grinder comparison in Zurich Oerlikon (Hagenholzstrasse 50b), where Eureka is part of the selection, or in Bern (Gerberngasse 44). It is an option, not a requirement. Not every model is set up at all times, so send your preferred model in advance to [email protected].

Frequently Asked Questions
How does grind-by-weight work on the Eureka Mignon Stark W?
The built-in Instant Grind Weighing technology (IGW) weighs the coffee as it grinds and stops the motor as soon as the set dose is reached. You don't need a separate scale under the spout for that.
How accurate is the dosing?
Eureka states a dose consistency of ± 0.2 grams. The scale is factory-calibrated and designed for any portafilter weight.
Does my portafilter fit in the fork?
According to Eureka, the new universal metal fork fits portafilters of all brands and sizes, including bottomless portafilters.
What's the difference between the Stark W and the Mignon Stark?
Both have 65mm Diamond Inside burrs. The Stark W grinds by weight with a built-in scale and has an upper blind burr, the universal metal fork and a 2.8-inch touchscreen. The Mignon Stark doses by programmed time.
Can I see the Eureka Mignon Stark W before I buy?
Yes, in Bern or Zurich Oerlikon, if it is currently on display. Drop us a line in advance at [email protected]. For a direct comparison with other grinders, there is the bookable comparison workshop.
Roastery tip: For espresso, we grind fine, start at 14.5 grams and work our way up from there, usually to 17 grams, at a ratio below 1:2. With the Stark W, you set the dose directly in grams. For espresso and milk drinks, our team roasts Cozy Chocolate and Nutty Delight: full-bodied, sweet, with notes of chocolate and nuts. If you're after maximum body with no acidity, reach for Very Nutty. That's our recommendation, one of many.
