The Comandante C40 MK4 Lab Series Hammerhead from our Comandante Collection is the latest variant of a hand grinder that has been considered the benchmark in specialty coffee for years. What has changed is invisibly inside: the burr. At the Bavarian Burr Lab in Germany, Comandante has developed a new geometry – the hexagonal block blade, inspired by the head of a hammerhead shark. The shape is not just decoration. It changes how the bean is cut.
What makes the Hammerhead geometry special
Grinder burrs are often treated as standard parts. They sit hidden inside the device, rarely receiving attention. Yet, the geometry of the burr significantly determines which compounds are released from the bean. Coffee contains over 800 aroma compounds – more than wine. The Hammerhead block blade is shaped to shear larger and denser beans more cleanly instead of crushing them. The result: a denser body, focused sweetness, clearly defined fruit aromas.
Comandante describes the Lab Series as an invitation to experiment – a space where the burr geometry itself becomes a variable. Our opinion is one of many, but we like this approach. A different burr geometry is not better or worse than the classic Nitro Blade, but a different language with which the same bean is told differently. Those who already enjoy Pacamara, Gesha, or other large bean varieties will find a new playground here.
The steel burr is made of Nitro Rex® – a martensitic stainless steel from the Alpine region with over 17 percent chromium content and precisely tuned amounts of vanadium and molybdenum. The result is a hardness and corrosion resistance that allows the burr to operate consistently for years. The body of the grinder is made of stainless steel, the axle of stainless steel, the crank of stainless steel, the knob of German oak, treated with a natural wax-oil finish. The internal engine frame is Eastman Tritan, BPA-free. Two micro ball bearings with rubber seals ensure smooth operation for years. What is the Hammerhead burr particularly suitable for?
The hexagonal block blade geometry was specially developed in the Bavarian Burr Lab for larger and denser beans. Pacamara, Gesha, and similar varieties are sheared more cleanly. The result is a denser body with focused sweetness and clearly defined fruit aromas. Other beans also work – the Hammerhead simply shows its particular strength with the larger ones.
How does Hammerhead differ from Nitro Blade and Tigershark?
The three burrs are all part of the Comandante Lab Series and differ in geometry. Nitro Blade is the classic, universally designed variant. Tigershark has its own blade architecture. Hammerhead works with the hexagonal block blade and is designed for larger, denser beans with fruity complexity. Which is better depends on what you want to experience in the cup – it's not a hierarchy, it's a choice.
Is the grinder also suitable for espresso?
Yes. The C40 MK4 covers the entire spectrum, from French Press to espresso. For espresso, it requires a bit more patience when grinding and fine calibration. A Red Clix axle is a useful addition here because it halves the step size and makes it easier to find the ideal setting.
How do I care for the Comandante C40 MK4?
The burr is cleaned exclusively dry – with a brush, without water. The body is wiped with a slightly damp cloth. The Bean Jars are washable with warm water; both are food-safe and taste-neutral. With normal use, the burr is low-maintenance for years.
Can I see the grinder before buying?
