The cup stands on something soft instead of bare metal, and it's still warm when you take it down.
Espresso comes in a small quantity and cools down correspondingly quickly. A preheated cup holds the temperature longer, and temperature decides which compounds are released at all and reach your nose. What we experience as aroma arises largely retronasally, that is, via the throat to the olfactory mucosa as we swallow. An espresso that cools too quickly loses depth precisely there.
That's why this mat has a precisely matched hole pattern: the warmth of the tray still reaches the cup, and preheating works as usual. At the same time, there's a layer between the base of the cup and the metal that catches scratches and signs of wear. The material is a vegan leather alternative made of polyurethane, washable and easy to care for, and its thickness ensures that it lies flat without creases or waves.
It's cut for the Profitec Pro 300, the compact dual boiler machine with a ring group head that can also be run as a single boiler if needed.
