A steam tap doesn't break, it gets tired. Year after year the cone presses onto the same seat, each time a little hotter, each time with a little limescale in between. At some point closing it is no longer enough, and you notice that you're tightening it harder than you used to – which flattens the seat even faster.
When it gets to that point, a complete tap does more than yet another gasket. You get the spindle, seat and sealing surfaces back in one consistent condition instead of chasing three small parts one after another.
When a faint hiss remains after closing. When water or steam escapes at the shaft. When the handle judders, is stiff or turns further than it used to. When you need force to close it just to make it stop.

The tap sits in the pressurised steam path. Before any work, the machine must be disconnected from the mains, depressurised and completely cooled down. We deliberately don't give step-by-step instructions here – a poorly seated fitting only starts leaking under operating pressure. Have the replacement done by a qualified technician.

After frothing, we always leave the tap open for one second longer before closing it – the last burst of steam blows milk residue out of the wand that would otherwise be drawn back in as it cools. That's our workshop routine, not a manufacturer requirement. For dialling in afterwards we use Nutty Delight, for chocolatey notes Cozy Chocolate and for body Very Nutty. All roasts under Coffee beans.
