It is an original La Marzocco basket for the Leva – the lever machine from Florence, whose saturated group head keeps temperature and pressure particularly stable. A precise, uniform basket distributes the water cleanly over the puck and turns the slow lever pull into a round, clear cup. Espresso is extraction via a weight ratio, usually 1:2 – so for 17g, about 34g in the cup. Taste and smell are inseparable; a large part occurs retronasally.
