This sieve is a low-flow sieve with particularly fine holes of 0.18 mm. The convex bottom is milled from solid material – that's what "billet" means: manufactured from a solid block instead of pressed. The fine holes deliberately slow down the flow and give you a slow, quiet extraction. This is our observation, one of many.
The choice of sieve fundamentally changes the aroma profile – often more than many expect. Particle size and uniformity determine how cleanly extraction occurs, and pressure opens a time window in which the various aromatic compounds dissolve one after another. We always consider extraction in terms of weight ratio, 1:2 as a starting point, never by time alone. No right, no wrong – ultimately, what matters is that you enjoy the coffee.
Nobody needs a different sieve to make good espresso. But those who want to shape their extraction more consciously and explore a particularly calm, slow cup will find a tool here that is built precisely for that. You want it – or not, no must.

The 54 mm sieve fits into standard 54 mm portafilters, and the 58 mm sieve into standard 58 mm portafilters. The actual capacity may vary slightly depending on grind size, roast level, and humidity – no day and no shot are exactly alike, and that's the beauty of it.
