Rocket Giannino burr pair 55 mm – so your grinder cuts again instead of crushing
Inside the Giannino, two 55-millimetre burrs work against each other. They cut the bean into particles that should all be as close to the same size as possible – and exactly this evenness decides whether the shot runs cleanly or breaks through at one spot.
Sharp edges don't last forever. At some point the grinder crushes more than it cuts: the grind setting has to be set finer and finer, grinding takes longer, and the espresso still turns out thin. This pair resets the grinder.
When it's due
Dull burrs don't announce themselves with a defect, but with a gradual decline. You turn the grind setting finer step by step, and the extraction time still stays too short. The grounds no longer feel even between your fingers; alongside fine powder they contain visibly coarser pieces.
Then there are the signs you can hear and smell: with the same dose, grinding takes noticeably longer than it used to, the grinder gets louder or rattles, and the grounds smell warm instead of like coffee. In the portafilter the same thing shows up as channelling – at one spot the shot runs through faster than in the rest.
Our documentation for this item does not state a lifetime in kilograms after which a replacement would be due. So we don't give one. If you're unsure, send us two photos of the removed burrs and we'll look at the edges together.

Important for installation
To replace the burrs, the grinding mechanism has to be opened. This exposes the motor and its power supply, and after fitting, the burrs have to be aligned with each other. We deliberately don't give step-by-step instructions here.
The reason is the zero point: after every burr change, the point at which the burrs just barely touch has to be found again. Set it too tight and then run the grinder, and you ruin the new edges in seconds. Have the change done by a specialist – or bring the grinder to us and we'll take care of it in the workshop.
Who it's for
For anyone with a Giannino that grinds every day and whose grind consistency is no longer what it used to be. If you only pull espresso at the weekend, you'll go years without a change; if you grind for several people every morning, considerably less.
And for anyone who has taken over a used Giannino: new burrs are the most affordable way to a starting point you know.
What goes with it
Part of the same family are the 75 mm burrs for the Super Fausto, the 65 mm burr pair for the Fausto and the burrs for the Faustino V2.
For grind adjustment on Rocket grinders we carry the adjustment knob for the Faustino and the adjustment wheel for the Faustino V2; on top of the grinder sit the complete bean hopper for the Faustino and its rubber ring.

The workshop tip from Bern and Zurich
In Bern and Zurich we clean every grinder before we talk about new burrs. Surprisingly often it's not a dull edge but a grinding mechanism clogged with old coffee oils – a dose of grinder cleaning granules and a blown-out grinding mechanism then do more than a set of burrs. Only if the grinder is clean and the grind consistency still stays uneven do we order burrs. This is our routine from the workshop, not a manufacturer's specification. For the test shots afterwards we reach for Nutty Delight and Cozy Chocolate in the workshop, and for maximum body without acidity for Very Nutty; the full selection is in our coffee beans.
No returns
Service parts are excluded from exchange and return. They are procured specifically for each order and cannot be resold after installation or a trial fit on the machine. So before ordering, please check the model, year of manufacture and serial number of your machine – or drop us a short message and we'll clarify the fit together. Your rights in the case of defective goods remain unaffected.
Frequently asked questions
How can I tell whether the burrs are dull and not something else is stuck?
The simplest test is cleaning. If the grinder runs like it used to after a dose of grinder cleaning granules, it was coffee oils and not the edge. If the grind consistency stays uneven afterwards and the grind setting still has to be unusually fine, that points to the burrs.
What is the part number for this part?
We don't know it. Our documentation lists this item without a part number, and we don't give one we can't verify. Send us the number from your service documentation and we'll confirm the fit.
Are both burrs included?
Yes, the item name states a pair. We don't claim any further parts such as screws or shims, because our documentation says nothing about them.
Do these burrs also fit another grinder with 55 millimetres?
The item name mentions only the Giannino. The diameter alone isn't proof enough, because the mounting and hole pattern are part of it – and those aren't in our documentation. Write to us with your model and we'll check it instead of guessing.
Can I see the part at your showroom?
Yes. In Bern at Gerberngasse 44 and in Zurich at Hagenholzstrasse 50b, service parts are ready to view, and we'll check together with you whether the version fits your grinder.
Not sure whether the part fits your grinder? Write to us at [email protected] with the model and serial number, and we'll check the fit together. We deliver across Switzerland and to Liechtenstein in 2-4 working days.
