Twelve, perhaps fourteen grams – a slim, precise dose. And yet, much is decided here: hundreds of tiny holes, each exactly the same size, allow water to flow through the puck at the same speed everywhere. The first drop in the bottomless portafilter shows it – calm, even, without channeling.
No one needs a basket like this for good espresso – the original basket does its job. You want it because the cup becomes clearer and rounder. This is one of many possible decisions, and we respect both directions.
What makes this basket special
E&B-LAB is IMS's experimental laboratory, and this basket shows what's possible there. Instead of punched holes, the hole pattern is created by electroforming: 715 holes, each with a constant 200 micrometers, evenly distributed. In addition, there is a membrane integrated into the basket that keeps the puck stable during extraction and reduces channeling. You taste this as an even, rounded extraction – density, sweetness, caramel, and nut clearly in the glass. Espresso is extraction via a weight ratio, usually 1:2; how cleanly this is achieved depends on the even flow – this is precisely where this basket comes in. It is our observation that the choice of basket fundamentally changes the flavor profile.
