A calm quarter turn over the basket, and the loose mound becomes a level surface, even right up to the edge.
What happens next is decided beforehand. Water looks for the easiest path through the coffee bed. If the grounds lie unevenly, it finds that path faster in one spot than in another – if they lie level, the flow spreads across the whole surface. Particle size and evenness determine extraction quality, and the Leveler works on exactly the second half of that.
The Leveler reaches as deep into the basket as you set it – steplessly, by turning the head against the rim. That matters more than it sounds: if you work with 18 grams, your bed is different from someone using 21 grams, and a tool with a fixed setting only ever fits one of them. Once matched to your dose, the Leveler repeats the same depth with every shot.
It's handmade from aluminium and stainless steel, with a 58 mm diameter for common portafilters. It has a solid weight in the hand, and the rim glides cleanly on the basket – the tool doesn't need any more technology than that.
A level coffee bed makes a shot more comparable. It doesn't automatically make it better, and it certainly doesn't make it replicable – the bean, the humidity and the person change every day, and no shot is like yesterday's. That isn't a limitation, it's the beauty of it. There are no espresso laws and no single right tamping pressure. Our opinion is one of many, and in the end all that counts is whether you enjoy the coffee.

For everyone who works with a 58 mm portafilter and notices that two shots with the same dose run differently. A level bed takes one of the variables out – and makes it easier to understand the rest.
Just as much for everyone who simply enjoys working with good tools. A leveler made of aluminium and stainless steel isn't a necessity. Nobody needs one. You want it – or you don't, and both answers are fine. If you want it, you know why.

Then comes the tamping pressure. It rests with its rim on the basket and, as you turn it, levels the grounds at the surface. Instead of a mound in the middle, the bed then lies flat and even right up to the edge – the basis for water running through at a similar speed everywhere.
The pressing depth is steplessly adjustable: you turn the head against the rim until the Leveler reaches exactly as deep into your basket as you need for your dose. Once set, the setting stays the same for all further shots.
It can level the coffee bed and compress it slightly, but it doesn't fully replace the pressure of a tamper. Many people work with both: first distribute and level, then tamp. There are no espresso police here and no single right tamping pressure – consistent pressure makes the shot more comparable, not automatically better.

A level bed shows most clearly with roasts that have substance. Cozy Chocolate and Nutty Delight give dense, sweet cups with caramel, chocolate and nut – you'll notice straight away when the flow becomes calmer.
