What makes the leveler
During the shot, water seeks the path of least resistance through the puck. If the grounds sit unevenly, it flows faster where they're looser – and extraction becomes uneven. The leveler evens out the surface before you tamp: its angled faces on the base push the grounds sideways and level as it turns.
The height is adjusted on the tool so it matches the amount of grounds in your 51 mm basket. A simple motion: place, turn, tamp. Espresso is a craft, not a law – an even bed just makes it more repeatable. Our opinion is one of many.
