Not a grassy green, but a deep brown that recalls roasted nuts and warm caramel from the very first stir. The first sip is round and gentle, with a warmth that suits a quiet moment more than a wide-awake start to the day.
This Hojicha comes from the same fields in Uji, near Kyoto, where our Matcha grows too. After the first harvest in spring, the tea plants receive a balancing prune, and it's exactly these leaves that are then gently roasted to a medium roast and finely ground. The roasting makes the difference: it turns the green freshness into a warm, round aroma with soft roasted and hazelnut notes, breaking down much of the bitterness still held in the unroasted leaf.
That's exactly why Hojicha can handle hotter water than its green relative, up to 80 degrees, without turning harsh. The roasted compounds need that warmth to unfold, while water that's too hot quickly draws too much bitterness out of unroasted Matcha. And as with any aroma, smell and taste are barely separable: much of what we perceive as a nutty, gently sweet roasted aroma only forms retronasally, when the aromatic compounds rise to the olfactory epithelium as we swallow.
Because roasting breaks down much of the stimulating compounds, this Hojicha is naturally low in caffeine – a tea that still has a place in the late afternoon or evening, without disturbing your sleep. Whether whisked up on its own or as a mild latte, there's no right or wrong here, only what tastes good to you. Like any tea, this one never tastes exactly the same twice, because water, mood and how you're feeling on any given day keep changing. That's not a limitation, that's what makes it beautiful.

For one serving, add one to two level spoonfuls of Hojicha powder, roughly two grams, to a bowl or cup. Using a little water at up to 80 degrees, first stir the powder smooth so no clumps remain, then whisk it with a bamboo whisk or a milk frother until a fine texture forms. On its own, the Hojicha shows its full roasted warmth; with frothed milk, dairy or plant-based, it becomes softer and rounder – in our view, oat milk pairs especially well with the roasted notes.
