What makes this basket special
It's an original La Marzocco basket for the Leva – the lever machine from Florence, whose saturated group keeps temperature and pressure particularly steady. A precise, even basket distributes the water cleanly over the puck and turns the slow lever shot into a round, clear cup. Espresso is extraction via a weight ratio, for us usually below 1:2; with 14 g, that means less than 28 g in the cup. Taste and smell are inseparable; a large part arises retronasally. It is our observation that the choice of basket fundamentally changes the aroma profile.
