Roastery knowledge: How particles shape the flavor

As roasters, we work with extraction chemistry every day. What's immediately noticeable in practice is that the quality of the grind determines whether the aromas from our roasting profile actually reach the glass. Too many fines (dust particles) contribute to mouthfeel and body. Particles that are too coarse allow the water to pass through too quickly, resulting in a watery and acidic espresso.

Grinders with large, flat burrs produce a very clean particle distribution. This particularly enhances the aromatic nuances of light, fruity roasts. Conical burrs , on the other hand, often work in a way that emphasizes the full body and chocolatey sweetness – ideal for medium and dark roasts. And one more thing that many retailers don't mention: the majority of your espresso is water. The best grinder can't compensate for hard water – but it's the irreplaceable foundation for good beans to taste good at all.

Known characteristics and limitations

What is often discussed in forums – we'd rather tell you directly:

  • Single-dose and workflow: For those who want an espresso half asleep in the morning, the separate weighing of single-dose coffee is often a nuisance. It's a deliberate workflow designed to ensure freshness.
  • Hopper grinders and roast changes: Constantly switching between different beans means emptying the hopper and grinding out old grounds. This wastes coffee and is frustrating.
  • Flat burrs and break-in period: Large flat burr grinders (e.g., Weber EG-1 or Mahlkönig X64) require a break-in period ("seasoning") of approximately 5–10 kg of coffee until the burrs are perfectly broken in. This is physics, not a defect.
  • Stepless vs. Stepped: Stepless adjustment allows for extremely fine-tuning of espresso, but requires a certain amount of finesse. Beginners often find it easier with a stepped adjustment.
  • The myth of "zero retention": Even with "zero retention" grinders, a minimal amount of coffee grounds remains in the housing. Manufacturer specifications are idealized – in practice, we're talking about a very good 0.1–0.3 g.

Which grinder is suitable for my espresso machine?

It depends on your setup. As a rule of thumb: If you have a dual boiler or a La Marzocco espresso machine, a cheap entry-level grinder will completely bottleneck the machine – a stepless grinder is essential here.
