The water rises bubbling into the upper globe, mixes with the coffee, and as soon as the heat fades, it draws back down clear and fragrant – siphon brewing is physics you can watch.
The Sommelier is Hario's elegant vacuum brewer: a brewing method that uses heat and vacuum to create a cup that's clear and aromatic at once. We carry it at Coffee Coaching Club.
How the siphon works
In the lower globe, heat creates steam pressure that pushes the water up into the brewing chamber. There, the coffee steeps evenly. Take the heat source away and the pressure drops – the resulting vacuum draws the finished coffee back down through the filter. The result is a cup with the clarity of a filter coffee and a full, round body. The Sommelier runs on the included alcohol burner or on the optional infrared heater.

What goes with it
For the siphon, you grind medium – a grinder from our hand grinders or from our electric coffee grinders. A scale from the Normcore range helps with dosing, and the infrared heater makes the heat reproducible. Replacement filters are in the Hario collection.
